The Big Salad

What’s in the big salad?  Big lettuce…big carrots…tomatoes like volleyballs.

Last night, we enjoyed Big Salads after a visit to the farmer’s market.  Love the bounty we came away with:

The radish pods were especially interesting—they look like edamame, but taste like spicy radishes:



We used a lot of the produce we got to make our Big Salad dinner: lettuce, tomatoes, carrots, zucchini, cucumber, hard-boiled eggs, and gruyere:


We topped the salad with one of the souvenirs we brought home from our Blue Ridge trip—vinegar and olive oil from the Blue Ridge Olive Oil shop:


So good!

I’m trying to eat healthier after indulging a little too much on our vacay.  These Big Salads were a good start!

    YES! I’m making big salads tonight. I’m going to roast the vegetables during the day so they’re ready to go tonight. Everything looks so good

    Yum, that looks fabulous! We’re trying to do the same thing – a little too much of a good time on vacation! Glad everything is going well with Lila – a little one-on-one time is lots of fun.
