How about a little weekend recap on this beautiful Monday morning? On Friday, my parents got to the cabin around 2:00. We had fun showing them around the cabin and relaxing on the dock. For dinner, Ryan grilled meat:
…and I made this super-easy salad: corn, chopped tomatoes, and feta cheese (plus salt and pepper). Ridiculously easy and delicious.
On Saturday, we got up bright and early to head to Brasstown Bald, the highest point in Georgia. The “hike” was actually a paved path, and not even a mile—but it was STEEP! After quite the climb, we found ourselves at the top with a beautiful view:
All that climbing required carbs for dinner…right?
My mom made a pasta carbonara that was awesome.
Yesterday (Father’s Day!) called for a little more hiking. We wanted to take them back to the hike that has been our favorite so far—Long Creek Falls.
Great hike! And with that, I think we’re actually finally hiked out. Today, we’re talking about going into town (Blue Ridge) and exploring some of the little shops. Hope you had a great weekend! Happy Father’s Day to all you dads out there!
