Weekend Roundup + Grilled Vegetable Summer Salad

Helloooooo, Monday.  Sad smile  Another summer weekend, come and gone.  Sigh.  Ours was a good one though—we’re really trying to soak up these last few weeks of summer before school starts!

On Friday morning, we took Lila to a local splash pad park:


After Florida, she seems MUCH more comfortable in the pool and bathtub—in fact, now she cries when she has to get OUT of the bath. Splash pads, however, still aren’t her favorite—I don’t think she likes getting sprayed in the face (and really, who does?!).

Then, on Friday night, we met up with some work friends for a Huntsville Stars baseball game:

She actually sat and watched the game for about the first 45 minutes! Then we traded off wandering around the stadium with her, haha.  Winking smile 

On Saturday night, we grilled up some pork tenderloin using this sauce:


….that we picked up on our Michigan trip.  Made me miss Michigan!

We served the meat with this delicious grilled vegetable salad:


Ryan grilled zucchini, purple onion, and corn.  Then, once they had cooled a little, I chopped up all the veggies and mixed them with fresh tomatoes and blue cheese.  Simple and delicious!

I guess you run the risk of uninvited dinner guests when you take your pictures outside.  Winking smile

Last night, we used the same pork for tacos:


…with pineapple salsa.  That pork did double-duty really well—both meals were delicious!

I’m going to post my workout log for the week later today—I did pretty well!

    Those veggies look great. And I agree – water in the face is never pleasant.
