Back in the Groove

Well, vacation had to end sometime.

Sigh.

Actually, as much as I love vacation, it *is* always really nice to come home.  We miss our dogs and Tenny Cat, and there’s just something wonderful about sleeping in your own bed. 

And, for that matter, there’s something wonderful about cooking in your own kitchen as well.  Vacation eats are fun, but I usually find myself worn out on heavy food and sweets (and a few pounds heavier, ha) by the time vacation is over. 

Yesterday, we arrived home to a pitifully empty fridge:

…which prompted me to go to the grocery store and fill a cart with ALL sorts of healthy eats—fresh fruit, veggies, eggs, almond milk—the works.  Is it just me, or is it a WHOLE lot easier to eat healthy when you have a clean, stocked fridge?  Love it.

For dinner last night, I made these easy, healthy Greek pita pockets.

I started by sautéing some chicken and onions in a bit of olive oil:

While the chicken was cooking, I chopped up kalamata olives, feta, roasted red pepper strips, half a cucumber, and some fresh herbs from our garden—oregano, mint, and basil.

We stuffed the pockets:

…with lettuce, plus the fixin’s, and as we ate, we both dipped the pockets in Greek yogurt:

    Yum! This is great… I’m going to make a little Greek chicken and veggie salad inspired by this. I already have all the ingredients, yay!
