Feeling Crabby

Actually, that’s not true.  We’re feeling pretty good:

Things are going well here—lots of sun, a little rain to cool things down, long naps for all of us, beach walks, and delicious food, including this simple, tasty crab dip that my mom made for an appetizer on Sunday night:

This was so good—not nearly as heavy or “mayonnaise-y” as a lot of crab dips are.  This just tasted really fresh—perfect for beach-time…or anytime, really!

Crab Dip:

2 cups lump crabmeat

1/3 cup chopped green onions

1/4 cup capers, drained

juice of 1 lemon

3 tbsp. mayonnaise

cajun seasoning (like Tony’s) to taste

Mix and enjoy with crackers!

Lump crabmeat is pricey, but man is it worth it sometimes.  So good!

    I want to make this with greek yogurt! Looks so good. Glad you’re having fun!!
