Tuesday in Empire
Yesterday, we headed out for another repeat hike—well, a repeat for me, Ryan and Lila. We hiked Empire Bluff earlier in the vacation on our own, but the view at the top of this hike is so spectacular, I couldn’t imagine not doing it again with my mom and dad. Plus, Lila was screaming and crying the ENTIRE time when we hiked it the first time, so it was nice to take in the scenery without a wailing baby on my back.
After our hike, we drove into the town of Empire, which was tiny and adorable. We had a delicious lunch, followed by delicious ice cream, and a short game of checkers:

I know I haven’t been posting many food pics, but we HAVE been eating, and eating quite well at that! Last night, we enjoyed pork tenderloin, topped with this easy cherry wine sauce:
For the sauce, I pitted about 2 cups of cherries, then halved them. I heated 2 tbsp. butter in a sauce pan, then added the cherries plus about 1 cup red wine (I used a malbec that we had open), and a sprinkle of salt. I brought the sauce up to a boil, boiled it for about 5 minutes, then let it reduce over low heat for about another ten. By the time dinner was ready, the sauce was nice and thick:
Really tasty, and a perfect use of cherries in the cherry capital of the world!
