Pomegranate Corn Salad

Hi friends!  Greetings from…Seattle!

Yesterday, we flew with Lila on TWO three hour flights, from Huntsville to Denver and Denver to Seattle.

And she did…GREAT! Such a relief! We ended up buying her a seat of her own on the plane so that we could bring the carseat along, and while I know this is an added expense, it was SO worth it. As we watched other babies squirm, cry, and crawl on their parents for three hours, Lila settled right down into her carseat and slept almost the entirety of both plane rides. 

I was worried about the long trip, so the fact that it went so well is a HUGE relief.  I also worried that she’d be really messed up from the time change, but she went to bed right at seven last night as usual, and after a brief wake-up at 4, she woke up for good at 5:30—not great, but whatever. I’ll take it. Winking smile 

I’ll post some more Seattle pictures soon, but here’s a holiday recipe that I thought you might like. 

My cousin Elizabeth brought this to the family party we never made it to, and we made it ourselves for a party last Saturday—it was a BIG hit.  I served it with tortilla chips like a salsa, but honestly, I think it would work just as well as a salad. 

Pomegranate Corn Salad

Arils from 1 pomegranate

1 can yellow corn

1 can white corn

1 can hominy

1/4 cup chopped cilantro

1 can black beans

olive oil

cumin and salt to taste

Combine all ingredients, then drizzle with olive oil.  Season generously with cumin and salt, and toss to mix ingredients.

SO easy—the only hard part is removing the arils from the pomegranate, but it’s worth it!



Very tasty—and a nice break from the typical super-heavy holiday fare.

    That looks fantastic. I’ve actually never tried pomegranates. So glad she did so well flying! Have a wonderful time.

    We go to a monthly dinner club and I’m totally bringing this next month!!! Glad she did great! We flew with Kaylin on our laps last time…I think we will be springing for the extra seat too

      It’s expensive (obviously), but especially for long flights, I think it’s totally worth it.

    Sounds YUMMY! Who would have ever thought of this combo?? Not me. But I love it.
