Hi friends!

How was your weekend?  We’ve had a busy one—dinner out on Friday night with colleagues and a visiting lecturer that Ryan brought in to the university, birth class on Saturday followed by a potluck dinner with friends, and church today plus a tour of the hospital…followed by a MUCH needed nap!!

Last week was super-busy for Ryan—he was in charge of driving the lecturer around all week to various lectures (duh), dinners, lunches and class visits.  Luckily, the man he brought in was really friendly and fun to be around—it was a busy week, but a fun one.  And it wasn’t really busy for me—I only attended a few of the events.  So what have I been doing?

Oh, you know…thinking about baby.

I know I complained about this in my last post, but seriously, the waiting thing?  Killer!!! And it isn’t helping that 5 people I know (including blogger Heather!!) who announced their pregnancies around the same time I did have gone and had their babies.  :-)  I am SUPER happy for all the new mamas out there…but it definitely makes me all the more anxious as we wait for our own little diva lady to decide that she’s ready to come out.

The thing is, we still have three weeks until my due date rolls around, and even then, it could be at least another week.  So, in other words, I need to stop thinking about it.

But boy is it hard.  🙂

To distract myself, I DID manage to get into the kitchen this weekend.  Remember when I told you that this time last year, we were in Key West?

Yeah, I pretty much wish we were there right now.  I’d risk giving birth in a city that’s 17 hours away if it meant that I’d be doing this right now:

…instead of going to birth class.  Sigh.

Lila, I hope you already appreciate the sacrifices that we’re making for you.  I plan on lording them over you for the rest of your life.  Get ready.

Since taking a beach trip right now is out of the question (*cough LILA cough*), these tropical cookies will have to do.  I brought them to the potluck last night, and they were a hit—such a unique flavor combination!

Lime White Chocolate Chip Cookies

2 3/4 cups flour

1 tsp. baking soda

1/4 tsp. salt

2 sticks butter

3/4 cup sugar

2/3 cup brown sugar

2 egg yolks

juice of 3-4 limes (about 1/2 cup)

zest of 3-4 limes

1 cup white chocolate chips.

Preheat oven to 350.

In a mixing bowl, cream together butter and sugars.  Combine lime juice, lime zest, and egg yolks, then add to butter mix.

In a separate bowl, combine flour, baking soda, and salt.  Add slowly to butter mix, mixing to combine as you add.

Fold in white chocolate chips.

Drop by the spoonful onto non-stick cookies sheets, and bake for about 10 minutes.

If we can’t all be in Key West, enjoying a big slice of Key Lime pie, these cookies have got to be the next best thing.

Happy Sunday!

Those cookies look wonderful! Somehow, I don’t think they are on my new diet plan. Maybe in 10 days.

I really can’t believe you are due in three weeks. I know you will probably kill me when I say this (because I’m sure for you it’s the opposite) but I feel like your pregnancy has gone by so fast! I feel like just yesterday you were announcing it to all of us! Craziness. Now your touring the hospital and taknig birth classes?! I can’t wait!!!

Haha, no, it’s actually gone by pretty fast for us too. I don’t know– fast, but also very very slowly in a weird way 🙂

I am do excited for you! I can’t wait! I know the last part is a hard waiting game, but she will be here soon. Oh and I totally want to be on a beach right now too and that does not seem like it will ever happen…

I hope you have a great week Anna!

Hang in there lady! Little Lila will be here before you know it 🙂 And in the meantime, these cookies look like a great way to kill time!

I’m craving sun so badly right now that this morning a looked up spray tanning places (there are none around me) and then I contemplated laying on a beach blanket in our front yard because it was going to be a whopping 65 and sunny. I would kill to be on that beach right now!
Those cookies aren’t a bad substitute though 😉

This looks like the recipe we made in my catering class at school. It soon became a favorite. Hopefully the days will go by fast and our Lila will make her appearance 🙂

A professor (and two time mom) just told me that the last semester of law school is like the last trimester of pregnancy — you’re ready not to be a law student/pregnant anymore, but you’re totally not ready to be a lawyer/parent. My sympathies! I hope these last few weeks are easy going.

    • March 12, 2012 5:26 pm

Exactly!!! I hope the end goes well for you too 🙂

  13. March 12, 2012 5:11 pm

Hmmm….key lime pie meets white chocolate chip cookie. Sounds amazing!

I hope this last month speeds by for you.

Hang in there, she’ll be here in no time! I’m still in shock you’re so close to your due date, seems like you just announced your pregnancy!

The cookies look and sound wonderful and make me want to be back in Key West too. 🙂

Oh, girl, I know ALL about waiting! If you recall, Sam didn’t make his debut until a full nine days after his due date. (Though I’m sure Lila will be much more prompt with her arrival!) But, seriously, enjoy this opportunity to be selfish with your time. Read a magazine. Go to the movies. Take a bath. Go for a walk. Drink a cup of tea. Sleep! Because, although I know that Lila will make you ridiculously happy, you will miss doing those things for yourself. Oh, and eat more of these cookies while you can still use “being pregnant” as an excuse. Hang in there, lady!

My dad is a huge key lime pie fan, and I made almost the exact same cookies for father’s day years ago. Great minds think alike! Here’s hoping you stay patient, and baby girl comes soon!
