How was your weekend? We’ve had a busy one—dinner out on Friday night with colleagues and a visiting lecturer that Ryan brought in to the university, birth class on Saturday followed by a potluck dinner with friends, and church today plus a tour of the hospital…followed by a MUCH needed nap!!
Last week was super-busy for Ryan—he was in charge of driving the lecturer around all week to various lectures (duh), dinners, lunches and class visits. Luckily, the man he brought in was really friendly and fun to be around—it was a busy week, but a fun one. And it wasn’t really busy for me—I only attended a few of the events. So what have I been doing?
Oh, you know…thinking about baby.
I know I complained about this in my last post, but seriously, the waiting thing? Killer!!! And it isn’t helping that 5 people I know (including blogger Heather!!) who announced their pregnancies around the same time I did have gone and had their babies. :-) I am SUPER happy for all the new mamas out there…but it definitely makes me all the more anxious as we wait for our own little
diva lady to decide that she’s ready to come out.
The thing is, we still have three weeks until my due date rolls around, and even then, it could be at least another week. So, in other words, I need to stop thinking about it.
But boy is it hard. 🙂
To distract myself, I DID manage to get into the kitchen this weekend. Remember when I told you that this time last year, we were in Key West?
Yeah, I pretty much wish we were there right now. I’d risk giving birth in a city that’s 17 hours away if it meant that I’d be doing this right now:
…instead of going to birth class. Sigh.
Lila, I hope you already appreciate the sacrifices that we’re making for you. I plan on lording them over you for the rest of your life. Get ready.
Since taking a beach trip right now is out of the question (*cough LILA cough*), these tropical cookies will have to do. I brought them to the potluck last night, and they were a hit—such a unique flavor combination!
Lime White Chocolate Chip Cookies
2 3/4 cups flour
1 tsp. baking soda
1/4 tsp. salt
2 sticks butter
3/4 cup sugar
2/3 cup brown sugar
2 egg yolks
juice of 3-4 limes (about 1/2 cup)
zest of 3-4 limes
1 cup white chocolate chips.
Preheat oven to 350.
In a mixing bowl, cream together butter and sugars. Combine lime juice, lime zest, and egg yolks, then add to butter mix.
In a separate bowl, combine flour, baking soda, and salt. Add slowly to butter mix, mixing to combine as you add.
Fold in white chocolate chips.
Drop by the spoonful onto non-stick cookies sheets, and bake for about 10 minutes.
If we can’t all be in Key West, enjoying a big slice of Key Lime pie, these cookies have got to be the next best thing.
