Pumpkin Love

What? You thought pumpkin was only to be used from September through November?


TRUE pumpkin lovers will dig deep into their pumpkin stash far beyond the autumn months.  I’ve been known to eat pumpkin oats in July—what of it?  That’s the beauty of being pumpkin-obsessed.  When you stock up on 20 cans a year:

…you can use those cans ANY time—not just in the fall months.

Last night, I used one of the cans from my stash to make this easy pumpkin tofu curry.  It wasn’t the prettiest dish…but it sure was tasty. 

Pumpkin Tofu Curry


brown rice, cooked

6 cloves garlic, minced

4 cups fresh spinach

1 can lite coconut milk

1/2 can pumpkin puree 

1 package firm tofu, drained, pressed, and cubed

1/4 cup red curry paste

1/2 tsp. salt

cayenne pepper for heat (optional)


In a heavy-bottomed skillet, heat olive oil.  Add garlic and spinach and sautee for 1-2 minutes; careful not to burn the garlic!  Add coconut milk, pumpkin, curry paste and salt and cook over low heat.  Stir until combined and continue to cook over low heat, careful not to bring to a boil.  Cook for 10-15 minutes, then add tofu.  Continue to cook over low-medium heat until tofu is heated through. 

Serve over brown rice.



Mmmmm…coconut milk + pumpkin = a delicious combination.  And a great wintery use of pumpkin, if I do say so myself.

    I still have 4 cans in my pantry. Pumpkin has no season in this house!

    I only have one can left! ahhhh!!!!!!!!! I think I need a few more. I like pumpkin in savory dishes like this and, well, I just have to make it!

    I’m with you – pumpkin year round in my house! when fall comes around and people start freaking out that they cannot find it? I am calmly ordering my case of pumpkin online… 😉

    this sounds SO good – I was thinking the other day it’s been too long since I’ve made curry!

    Pumpkin knows no calendar boundaries for me either. I love the idea of incorporating it into a curry!

    oh my gosh…I hoard it! Josh loves pumpkin bars and I love pumpkin in my yogurt….I have been buying it non stop!

    Girl I almost made something with the leftover cans of pumpkin in my cupboards but was like well I can’t really blog about it b/c no one wants to see pumpkin but yes, we do! So glad you posted this!!

    Oh this is totally something I would dig. I make a similar curry sauce, just need to add in the pumpkin. YUM

    Pumpkin is a year round thing year…it is true! I have pumpkin in the freezer and 4 pumpkins still waiting to be roasted! I LOVE pumpkin!

    You should see our cabinets, I think we have about 15 cans of pumpkin 🙂 Some are libby’s, some are the organic brand, and then I also have one from Pacific foods that is in a cardboard container! Yeah, I can’t get enough. I’d made this amazing recipe if I could eat tofu or coconut! It sounds SO GOOD!

    I always have pumpkin on hand because it’s a really good ‘quick fix’ for the dogs if they have a case of the scoots LOL (you’re a dog person, so I’m sure you can appreciate this little tidbit :-D) This dinner looks amazing – I’ve been trying a little tofu now and again and I’m excited to try this out!

    It’s funny you posted this today – I was at whole foods last night grabbing wellness for the dog and next to those cans was cans of pumpkin and I thought I ought to buy it because I can but I didn’t so bet you know where I’ll be tonight!
