Happy Accident

Sometimes, it’s the “accidents” in life that turn into the happiest surprises—right Baby Weber?

(I *kind of* have the start of a bump…but I really feel like I’m still just rocking the “I’ve been eating pizza and donuts for the past month” look…can’t wait for a legitimate bump.  I’ve seen t-shirts around the interweb that say “I’m not fat, I’m pregnant,” and I kind of really want one, ha).

We had our sixteen week appointment today—baby’s heartbeat was strong!  Just one more month until we find out the gender—I’m DYING to know!!!  Patience is not my strong suit.

Anyway, speaking of happy accidents…serendipity struck in the kitchen today as well.  I set out to make some healthy-ish, vegan cookies—healthy-ish because that scale ain’t going down any time soon, and vegan because I wanted to eat the dough (which I realize defeats the purpose of the first reason…eh, whatever).  I decided to go with spelt flour, having had good luck with it in past baking endeavors, and really just kind of threw this batter together. 

Low and behold, when I checked on the “cookies” in the oven after about five minutes, what I found weren’t quite cookies…but dough balls!  What a delicious accident!  Because they’re vegan, you can leave them very “dough-y” without worrying about a thing.  Except maybe your expanding waist line.

Did I mention I bought my first pair of maternity jeans last week?  It’s a good thing, because I think I’m going to need them…now.

Accidental Dough Balls


1.5 cups spelt flour

1 cup oats

1 tsp. baking powder

1 tsp. baking soda

1/2 tsp. salt

1 tsp. cinnamon

1/2 cup almond milk

1/3 cup brown sugar

1/3 cup vegetable oil

1 tbsp. vanilla

1 cup chocolate chunks

2/3 cup chopped walnuts


Preheat oven to 350

In a large mixing bowl, combine flour, oats, baking powder and soda, salt and cinnamon.  Whisk to combine.  In a mixing bowl, beat together milk, sugar, vegetable oil, and vanilla.  Add flour mixture to wet ingredients, then fold in chocolate chunks and walnuts.

Using a teaspoon to measure out the dough, form “balls” of dough with your hands, then place on greased cookie sheet.  Bake for 5-8 minutes (they will not flatten—be careful not to over-bake).  When you remove the dough balls from the oven,  allow to continue cooking (and cooling) on the sheets for at least ten minutes—this will help them to solidify.

    Your dough balls look great!

    “Just one more month until we find out the gender—I’m DYING to know!!! ” <— google 4D ultrasound. They can tell now. Starting about about 14-16 weeks. Pay for it out of pocket yourself. No more than $100 bucks plus you get the coolest pics ever. Well worth the money vs. waiting an extra month..well, for me it was 🙂 I was dying to know too!

    you have baking happy accidents?!?!?! i only have baking accidents =) and big ones at that! hehe!

    omgggg girly it looks like a bump to me! =) you can tell how lean you are everywhere else so if anyone calls you fat give me their adddress and i’ll take care of things! haha!

    Haha, I know exactly what you mean! I’m almost 15 weeks and I totally want one of those shirts. I’m afraid anyone that doesn’t know just thinks I put on some weight, lol! Those cookies look amazing. I’m supposed to get some spelt pretty soon – I can hardly wait to try these cookies, they look like exactly what I want right now 😀

    I love happy accidents! Those look so good! Love your bump! You are just too cute. Oh and you are keeping a journal, right? I didn’t and I wish I had. You are such a great writer, I would imagine it would be a great read down the road.

    I just found your blog from Erica @ Itzy’s Kitchen! CONGRATULATIONS! Dough balls look ball-erific.
    Your post was a joy to read, love the shirt idea too- you should get one! I also love that you made healthy cookies vegan so that you could eat the dough ( something I would totally do)!
