Oatmeal Chocolate Chip Carrot Cookies

August 10, 2011

Remember all the brouhaha a few years back about Jessica Seinfeld’s new cookbook?  When her cookbook, Deceptively Delicious, came out, another cook, Missy Chase Lapine, stepped forward and said that the idea was basically stolen from her own cookbook, The Sneaky Chef.  Both books centered around the idea of sneaking healthy ingredients like veggies into kid-friendly foods.

Well ladies, please don’t sue me, but I have my own deceptively delicious, sneaky recipe to share today on the blog.*

Oatmeal Chocolate Chip Carrot Cookies

1/2 cup butter, softened

1 cup packed brown sugar

1/2 cup granulated sugar

1 tsp. baking powder

1/4 tsp. baking soda

1 tsp. cinnamon

1/2 tsp. cloves

1 tsp. vanilla

2 eggs

1 cup grated carrots

1 cup all-purpose flour

1/2 cup whole wheat flour

2 cups rolled oats

1 cup semi-sweet chocolate chips

pre-heat oven to 375

In a standing mixer, whip butter until light and fluffy, about a minute.  Add brown sugar and granulated sugar and beat for another minute.  Add baking powder, baking soda, cinnamon, cloves, and vanilla, scraping down the sides to combine.  Beat in eggs one at a time.  Add carrots.  Add flours (all-purpose and whole wheat) in batches until combined. Stir in oats and chocolate chips.

Drop dough by rounded tablespoons onto parchment paper-covered cookie sheet or an ungreased non-stick sheet.  Makes about 27 BIG cookies.

Here are some pictures from the process:

My “drops” were probably closer to about 2 full tablespoons per cookie…but I liked that, because they came out BIG!

These cookies were great! The combo of the spices, the oats, and the carrots kind of reminded me of a spice cake, but they also had a traditional oatmeal cookie feel to them.  And a cup of carrots—that makes them healthy, right?

Deceptively delicious!

*Seriously, please don’t sue me.

Love the Silpat…love the cookies! I don’t really love Jessica Seinfeld though – must be honest here…

I love being deceptive!! These cookies sound fabulous. Yesterday my mom and I secretly threw flaxseed into my brother’s pancakes. He said, “did you sneak anything in these?!” and we said, NOPE! He loved them.

I just made zucchini chocolate chip cookies from “Animal, Vegetable, Miracle” — a great way to use up one of Jon’s arm-size zucchini. Your cookies were much more symmetrical than mine. 🙂

I can just picture the conversation between Jessica and Jerry during that debate “What’s upp with thaaat.” (Okay, my Jerry impersonation doesn’t translate to blogs so well.)

Those look delicious! I love the carrot and oatmeal mixings.

I was just thinking about making some carroty sweet, I was actually thinking about carrot cake oatmeal. Maybe I could take the flavors of your cookie and put them into oats? Or maybe I could just have a cookie for breakfast. 🙂

YUM. love this combination of flavors 🙂 and they look huge, which in a cookie, is never a bad thing!
