Never Underestimate…

I regularly run with Ella, but haven’t ever taken Baxter on my runs.  He’s so small—he only weighs 10 pounds! Plus, to be frank…he’s kind of a wuss.

But, yesterday, on a whim, I took him on my run along with Ella, and he did great! We covered three miles in about thirty minutes, plus another mile of walking.  What a stud!

The best part came after the run:

That dog won’t be chewing on shoes anytime soon.

Never underestimate…Pennsylvania weather.  It’s snowing outside.


Still…never underestimate the power of baking to turn a gross, snowy day into something great.  Or if not great, at least bearable.

And never underestimate simple ingredients…especially butter, flour, and sugar. 

Browned Butter Blondies


1 cup light brown sugar

1 tbsp. vanilla extract

2 tbsp. Frangelico liqueur (optional)

1 egg

1 cup flour

1 stick butter

pinch of salt


Over low heat, melt butter and cook until browned and frothy, about 5 minutes.  It should smell toasty, and should have gone from yellow to light brown in color.

In a bowl, combine sugar, vanilla, liqueur and egg, and beat until smooth.  Add browned butter and salt and beat for another few minutes.  Stir in flour in small batches, and beat until just combined.

Pour batter into an 8×8 baking sheet that has been lined with foil and lightly greased. Bake at 350 degrees for 20 minutes, then cool before cutting into squares.

Mmmmm…I really can’t over-exaggerate how good these are.  They have an intense caramel flavor that is just out of this world. 

And I’m not over-estimating my willpower…these are leaving the house tonight…otherwise, I’d eat the whole pan!

Never underestimate someone you usually consider a “nerd”—Ryan is going to a Lil’ Wayne concert tonight with our friend Steve! I’m sending these blondies along with him…although they’re lacking a certain ingredient that I’m thinking the rest of the baked goods at the concert are going to have. 😉

    Basil (15 pound dachshund – shorty legs!) can keep up on short runs – I think the longest has been 2 miles 🙂 it’s not a speedy run, but that’s okay 🙂

    Anna, I think I am going to buy real eggs and real flour and real butter and make these. They look…THAT GOOD!!!

    Hahaha, when I read about the concert and the blondies, I was thinking the same exact thing. They look absolutely delish though!

    So, if I move to PA can Lincoln and Baxter please have play dates?? They are the same size and my favorite thing about Lincoln is how he passes out after a day of playing!

    I’ve been craving sweet baked goods this week! These fit the bill perfectly. They look fantastic!

    I take our older dog out for runs with me (she loves it), however it’s my young guy who needs it ~ I would love nothing more than to totally poop him out. The problem is he’s 100 lbs and would pull me off my feet if we encountered any distractions! Maybe I should just go for it give it a try – I could be pleasantly surprised!

    My maltese Scout used to happily run 3 miles with me. My welsh terrier, who is 4 times Scout’s weight, won’t run with me for more than 10 minutes. Go figure.

    awww! Thats awesome that your little guy kept up! Whoop! Franks clearly not a runner haha. The blondies look FANTASTIC! I just finished baking and now I want to start again haha. Lil Wayne…thats just awesome.

    Yum! I love blondies. Might have to give these a go…I am never sure how well it will work with gluten free flour though – perhaps with all that butter, no one would know the difference?

    Those blondies look so bright and cheerful. You would never know there was snow on the grown!

    I have a small dog too and he does great on runs. He has bursts of speed. Its great interval training, I just let him lead the way.
