A Dang Quesadilla

Last night, we met up with our friends Casey and Rachael, who are also teachers of composition and creative writing at Penn State.  After the first week of classes, some sort of alcoholic libation is always necessary, and we had a fun time commiserating over beers.

Before we left for the bar, I made us a quick dinner.  Nothing is faster than a dang quesadilla…gosh!

First, I sauteed some mushrooms, onions, and spinach:

And then we spread each tortilla with Smart Balance, filled them with cheddar cheese and our filling:

…and then folded them over and grilled them in our pan until the cheese was nice and melty:

Mmmm….now *that* is a dang good quesadilla. 

We have our gym weigh in today! I hope we come out of it with some moolah!

    I love love love mushrooms and spinach in a quesadilla. YUM. i haven’t made dillas in a while…hmmm…Mexican Monday isn’t too far off.

    Dang quesadilla! A napolean dynamite reference is always necessary when talking about them. So glad you realize this 🙂

    quesadillas are so fun, easy, and quick-yours look great and it’s first thing in the morning and now I want one! ha.

    These look great. Our son loves to make these. I will share this recipe with him.I really like to make them without using meat but I haven’t used spinach before. Look forward to making them this way.

    Spinach, mushrooms and onions are soooo good together! I overdo it on the garlic sometimes… and that is a nobueno pre-bar snack! lemme tell ya! haha =)

    What salsa do you use? I get bored of mine quickly!

    I was just thinking about what I am going to make for dinner this wk and a quesadilla with spinach came to mind. I think I am going to add corn and black beans as well, can’t wait!
