An Antidote to the Sweetness

Still looking for a fun holiday gift to bake up for your friends and family?  This is a good one!

As much as I love sugar (and you know I do), I’ve actually gotten *almost* sweetened out by all of our baking over the past few weeks.  From cake balls to pecan pies to green and red holiday cookies, the overwhelming amount of sugar in my body is beginning to make me feel like Lindsay Lohan, two days into rehab.

And so, an alternative: cheese coins.

Their alternative status, of course, is not synonymous with “healthy.”  There are two full sticks of butter in the recipe– ‘nuff said.  But, though these will give you heartburn (blame the Tabasco and the cayenne pepper), and though they will raise your cholesterol with a single bite (blame, of course, the butter), they will NOT send your body on a sugar crash and burn.

Spicy Cheese Coins

Ingredients:

2 cups all purpose flour

1 tsp. salt

2 sticks butter, melted

1/2 tbsp. cayenne pepper

2 (10 ounce) packages extra sharp cheddar, finely shredded

a few dashes of Tabasco (or other hot sauce)

a few dashes of Worcestershire sauce

Directions:

Preheat oven to 350

Whisk the flour, salt, and cayenne pepper together. Work the melted butter into the shredded cheddar cheese until combined (you’ll probably need to use your hands for this).  Add the flour mixture to the cheese a little at a time, still mixing with your hands.  Mix for 5-10 minutes, until all of the flour is combined.  Add the hot sauce and Worcestershire and mix a bit more. 

Roll the dough into one inch balls and then push down with the fork, forming a decorative crosshatch. 

Bake 12-15 minutes on ungreased cookie sheets, removing from oven when golden.  Careful not to over-bake!

These are deliciously rich, spicy, and butter-crumbly.  The perfect antidote to too much sweetness!

    omg those look so good! and yes, an antidote to the huge sugarfest either IRL or on blogs, is sooo welcome! and i am super guilty of contributing to the sugarfesting, for sure, in the sphere 🙂

    These look wonderful, great idea for gifting. I love to dehydrate huge batches of kale chips with spicy hemp sauce for gifting.

    oh my gosh! These looks so yummy. Ever since I made crackers- I’ve been wanting to make a cheesy baked good. I will keep these on the list!

    The recipe seems similar cheese straws. Are they cousins? Cause I love me some cheese straws.

    Way to go for breaking out of the sweet box. I haven’t gotten there yet… but I’m quickly approaching it with all this baking. These might have to make an appearance on our Christmas party table!

    I am very sugared out myself so the idea of a sugar-free cookie-ish snack sounds delicious! And anything with 2 sticks of butter? Well, how can one really go wrong??
