Holiday Salad & Wine List

December 2, 2010

Hi friends! It sounds like many of you are box wine fans as well! Some of you asked which wines we had last night, so I asked our host Nick for a recap.  Here you go:

1. w/brie: Vendage Pinot Grigio — California (acid, but not dry), NV
2. w/salad: Bandit Pinot Grigio — California (extra dry, luscious), NV
3. before entree wine: Bota Box Old Vine Zinfandel — California (black berries, a hint of sweetness, little spice), NV
4. entree wine: Blue and Yellow 2008 Organic Malbec — Argentina (dark, inky, viscous), 2008
5. w/dessert: Robertson Old Almond Grove Late Harvest — South Africa, 2006

The second and third wines were my favorites!

And, as promised, here’s the recipe for the salad we made.  I based it off of a salad featured in this month’s Cooking Light, but changed it up from the original recipe quite a bit.  It was really tastyβ€”a nice mix of bitter and sweet.  Plus, the green and red presentation is perfect for the holidays!

Radicchio, Apple, and Walnut Salad with Orange Vinaigrette:

1 small head radicchio, chopped

2 small Granny Smith apples (or any other tart varietal), chopped into thin slices

1 fennel bulb, chopped, plus a few fennel fronds, finely minced

2 small heads bibb lettuce, chopped

2 tbsp. chopped mint

1/2 cup walnut halves, toasted

juice of 1 orange (about 1/2 cup)

3 tsp. walnut oil

1 tbsp. white wine vinegar

salt and pepper

Mix all ingredients and toss with dressing.  Serve!

My parents get a bottle of wine for $3 from Kroger shopping center. It is SO good. They give it as gifts for the holidays because nobody has ever heard of it and they end up thinking its some fancy wine its so good. LOL

I LOVE wine tasting..we have such great places in Cali. I also served wine in a wine-tasting room for a couple of years and learned a ton!

It’s hard not to learn wine here, I never get tired of trips to wine country and finding local odd little wineries. The salad looks fabulous!

Malbecs are my faaaaaavorite. The Thanksgiving dinner I went to this year did a wine pairing with the meal. It was pretty fantastic.

Yep, I love boxed wines!! I am just not that great at being able to tell between good wine and bad wine, so why not do boxed?! And actually boxed wine can be really great these days, and not so cheap!

Nice salad recipe. Very festive for the holidays! Thanks for sharing. I love walnuts but salads.

What’s better that a good bottle of wine and a healthy meal? Let me get a cup of coffee and some pumpkin bread and I’ll give it some more thought. πŸ˜‰
