Greetings from…Louisiana!

We traveled yesterday from Altoona to Pittsburgh to Dallas to Shreveport.  Whew!

It was a long day of travel, but it’s worth it to be with family during the holidays! I can’t believe Thanksgiving is less than a week away!

It’s become tradition that when we come down for Thanksgiving, my mom cooks up a big pot of gumbo on our first night home:

Of course, now that I’m a vegetarian, this tradition is slightly less exciting for me.  😉

But—being the supportive mom that she is, my mom had also cooked up a delicious vegetarian acorn squash soup for me.

It started with roasted acorn squash:

…which was then topped with acorn soup:

…and finished off with a red pepper Romesco sauce.  Yum!

We enjoyed homemade cookies for dessert:

These bad boys were packed with chocolate chips, pecans, cinnamon, and pine nuts.  Delicious!

Now it’s not even 6:20, but I’m wide awake.  Darn time change!

Not sure what’s on the agenda for today…but I’m willing to be that there will be some Sophie Time! Woo hoo!

    Those cookies look HUGE, chock full of good stuff and delicious. Yum. Hope you have a wonderful day…already eagerly anticipating the Sophie pics!!

    haha Thank you! The sweaters are great. GREAT job on your run, by the way! I have a sister as well, and this post is such good motivation for both of us.. 🙂
