Blogiversary Giveaway!

One year ago today, Heidi and Spencer were parading around town on the first day of their promotional book tour, How to Be Famous

I wonder how that worked out for them?

More importantly, however, one year ago today…I started this blog! I started this blog about a week after going vegetarian, which means that I’ve now been officially meat-free for over a year!

I have to admit, going vegetarian and starting a blog are both big ventures, and though I acted confident about both, deep down, I wasn’t sure how long either would last.  I’m proud to still be meat-free and blogging, 365 days later! 

To celebrate my blogiversary, I did some more vegan baking this morning.  I’m really having fun experimenting with baked goods these days! I’ve always said that I’m much more of a cook than a baker—I love the flexibility that cooking gives you.  I like being able to throw in a little of this and a little of that, and tend to find the near-scientific rules of baking a little too tough to follow.

But—I’m starting to feel more comfortable with baking! This morning, I had another vegan cookie success!

Vegan Molasses Cookies

Ingredients:

1/2 cup Earth Balance (or butter)

1/2 cup brown sugar

1/4 cup molasses

2 tbsp. granulated sugar

1/2 cup unbleached white flour

1/2 cup spelt flour

1/2 tsp. baking soda

1 tsp. baking powder

1/4 tsp. salt

1 tsp. ground cloves

Directions:

Preheat your oven to 300.

With a mixer, cream together the Earth Balance and brown sugar.  Add the molasses and granulated sugar and mix for another minute or two, until the mixture is smooth.

In a separate bowl, mix dry ingredients and whisk to incorporate. 

Slowly add dry ingredients to the wet ingredients, mixing until all of the dry mixture has been incorporated.

On an ungreased cookie sheet, drop the dough by the teaspoonful (I rolled it with my hands to get the balls uniformly shaped). 

Bake for 8-10 minutes—careful not to overbake!

These were really delicious! They’re really soft and buttery, with a nice depth of flavor from the cloves and molasses.  A perfect treat for fall!

This cookbook has everything from quickbreads to cakes to biscuits to cookies, and everything I’ve made from it has been fabulous! It was voted Cookbook of the Year by VegNews magazine the year it came out—you really can’t beat that, right?

    Ha – I guess it’s appropriate that Speidi just renewed their vows… More importantly, happy one year of eating veggies and blogging about it. I visit your blog frequently and hope you continue with it! I’d also be down to try some vegan baking 🙂

    I made some vegan ginger cookies with molasses a few weeks ago. I added unsweetened chocolate to them and they turned out amazing!

    Congrats on your anniversary (and being veg for a year too). Those cookies sound so good. I have some leftover pumpkin, wonder if I could work that into the recipe somehow without screwing it up.

    Those cookies look amazing!! I just started to go completely vegetarian and would love this cookbook to help me along my journey. Plus my niece is allergic to eggs and dairy and I know some vegan recipes call for earth balance and egg replacer, so now I’ll have someone else to share my meals and treats with 🙂

    I am just now getting into vegan baking. I made vegan pancakes the other day and vegan granola bars last night. So delicious! It’s so fun to experiment with vegan ingredients.

    Happy anniversary! I started a vegetarian diet in July and I often wonder how long I can keep it up. I’m totally fine with it now & don’t miss meat, but who knows how I will feel in 10 years?! What if I turn into Phoebe (from Friends) when I’m pregnant & crave meat?
    Anyway, I can’t believe the blog is only a year old. You seem like a pro! Keep on bloggin’ 🙂

    I am amazed at your accomplishments! I too went veg just over a year ago and love how great I feel. Those cookies look fabulous. I think I will make them and anxiously wait for them to bake while watching them through the oven door! my favorite thing to do.

    so how can I not comment??? 🙂 I have to say, I have come back to your blog many times for some good recipes. I am still dying to make the cookie dough balls that are meant to be eaten raw!! I even got down the food processor the other day to make it happen…then, well, it didn’t. One of these days!! 🙂 Congrats on 1 year meat-free! (and blogging)
