Diner Breakfast for Dinner

Hey guys! Great response to my dog post…guess I’m not the only one who thinks animals dressed in clothes are hilaaaaarious.  🙂

Today, I had a long day up at school, and then returned home ready for a fast, comforting dinner. 

Breakfast for dinner is something Ryan and I rarely eat…I’m not sure why, because I really like it! For some reason, a tofu scramble sounded really good to me tonight.  When I returned home to find a package (through the Foodbuzz tastemakers program) from the Nature’s Path folks with two loaves of delicious, toast-worthy bread on my doorstep, I took it as fate—breakfast for dinner was meant to be tonight!

For my tofu scramble, I simply sauteed some onions and green bell pepper in a bit of butter, and then added the tofu (half a block of firm tofu, not pressed, but drained and patted down with a paper towel to remove the excess liquid).  Cooked it all up with fresh ground pepper and salt, plus a healthy sprinkling of turmeric (which gives it that lovely “egg” yellow color…plus reduced inflammation and helps with stomach problems!).  Yum!

For my toast, I opted for the Nature’s Pride oatmeal—it has 8 grams of whole grains per slice!

Delicious! I’m wiped…time for some easy tv watching, and then I’m hitting the hay early!

OH! And one of my students said that it’s supposed to SNOW tonight!!! Wha?!?!?!  Say it ain’t so!!!

I’ll believe it when I see it! 😉

    That tofu scramble looks good. I have not tried that since last year when you were doing your vegan challenge. I liked it a lot then – I’ll have to make it again!

    Jason and I don’t ever do breakfast for dinner either – though, I’m not a big fan of typical breakfast foods.

    I love dinner for breakfast… my mom used to make eggs sometimes after a long day, but my dad would make french toast. Sweets for dinner are the BEST.

    That bread looks so good! I love breakfast for dinner…more than breakfast for breakfast, I dunno why! 🙂 I hope you guys didn’t get snow…YUCK!

    Breakfast for dinner is my favorite! Looks delicious! I think I am going to send my oldest son to you for a while…he thinks snow is GREAT and thinks he wants to live where it snows all the time. I think he will change his mind with he is freezing all the time. Have a great Friday Anna!

    We don’t usually eat breakfast for dinner either, but I know my husband loves it… especially french toast (super healthy, right?) maybe I should make it sometime soon!

    Breakfast for dinner is so easy and tasty – we love it around here. Plus I can basically get away with cooking something in 5 minutes or less – you can’t beat that!

    I got the same package in the mail yesterday and we also had breakfast for dinner, but I did french toast. It was amazing!!!
