Well, look what we spent this weekend setting up:

This could only mean one of two things: Either I should really put down this glass of wine, or…Sophie’s coming to visit!!!!!

With all of the wine and coffee I’ve been drinking lately, it’s a good thing it’s the latter.  😉

The last time we saw Sophie, she was just starting to roll over.  It will be fun to see the progress she’s made!

Next week, my parents, Katherine, and Sophie are coming to visit us.  Katherine and Sophie are staying at our house, and obviously a crib was needed.  We thought about looking into renting one, but we figure we’ll probably need one eventually…plus, there’s nothing like a little crib construction to bring a couple together, right?

Maybe not.

In any case, we got the crib together in under two hours, and then wandered down to the kitchen for a quick, SPICY meal:

Roasted Indian chickpeas, which we enjoyed with a variety of condiments and oven-warmed naan.  Yum!

The condiments were greek yogurt, apricot preserves, and coriander chutney.  The coriander chutney was H-O-T!!!! It practically burned my mouth off (in the best way possible)!

For the chickpeas, we simply tossed them in 1 tsp. safflower oil, 1 tsp. agave, plus about a teaspoon each of curry, garam masala, and cumin seeds.  Easy and delicious!

Well, another weekend is over…sigh.  See you Monday, friends!

    Anna! My heart was racing when I saw the crib. You had me so excited! Maybe you’ll need the crib sooner rather than later? 🙂 We miss you guys. I hope you enjoy your Sophie time.

    Great looking crib – but it only took you TWO HOURS?? I don’t think it really counts unless you use at least a half day to put those things together! We can’t wait to see both of you (and, of course, the two sweeties who live there, as well).

    Where do you find naan? I couldn’t find any at Kroger yesterday.

      Oh, Baxter has already spent some time in there. It’s a great way to contain him!! 🙂

      Our regular grocery store sells it in their bakery section…I remember Target used to sell it too, in Indiana…you might try there if y’all have a Super Target close by?

    I need instructions for those chickpeas, the flexitarian fiance would love them and I think I’d be OK with them too …
