Orange You Glad It’s Almost Wednesday?

Hey guys! Sorry to leave you high and dry at lunch! I ended up losing track of time and having to run out the door without blogging.  Luckily, I snapped a picture of my lunch before I left…I say luckily, because it was a delicious discovery!

This is half a cup of chickpeas, half a cup of pumpkin, and half a cup of fage, plus garam masala, ground ginger, and a tablespoon of mango chutney.  I know it sounds like a weird combo, but this had some serious deliciousness going on!  The sauce tasted like sweet and spicy pumpkin cheesecake! 

For dinner tonight, the orange train continued.  We made a simple, delicious pasta dish that came together in almost no time flat:

For the sauce, I sauteed some chopped onion, zucchini, mushrooms, and fresh tomato.  Once the veggies were done cooking, we topped our pasta with sauce and vegetables.  We used this jarred sauce from Dave’s Gourmet:

…and it was awesome!! Sweet and slightly tangy—so delicious! It paired really well with the salty parmesan that we topped our pasta with.

Now we’re watching Glee and relaxing…it’s been a long day! I’m glad the week is almost half-way over!

    Butternut squash pasta sauce in a jar?! That looks amazing!! I’ve never seen that before.

    I hope Sunshine might have that sauce! It looks good! I watched Glee, too. So glad it’s back on.

      Mom, we got ours just at our regular grocery store, so I would look at Kroger’s/Brookshire’s too!

    that pasta shape (totally forget the name) is one of my favorites! it’s got such a great texture to it and it’s perfect for sauce.

      Nope, I’ve never gotten into that show. I’ve watched it a few times, but I always get annoyed or angry with certain things about it!
