Sushi, Deconstructed

Hey guys!  It’s been a long (but productive!) day.  I had a workout session with Eric—it was intense!  I did a bunch of box jumps (jumping on and off of a box)—it sounds easy, but it was so hard!! I have a feeling I’ll be pretty sore tomorrow.

After we returned home from the gym, we got to work on dinner.  I’ve had an Annie Chun’s steamed rice bowl in the pantry for ages now, and tonight seemed like as good a night as any to use it!

With the rice as a base, I put together a bit of a sushi bowl, with rice, carrots, avocado, edamame hummus, and tamari rice crackers.  Yum!

Tomorrow, we’re flying out of Pittsburgh (home of Jessica!) to Seattle.  Not sure when I’ll be posting…but I’ll be seeing you eventually!

    girl you travel more than air force pilots! holy crap you’re a jetsetter! all i can say is live it up, once you have kids, you will CHERISH these memories of spontaneity and travel!!!

      Yes, still doing it every breakfast, and trying to do either lunch or dinner at least 50-75% raw!

    yay Seattle! I hope the weather is nice there. I absolutely loved our stay in the city and it was always sunny (sooo not Seattle-ish ;)).
