Not this:

Or this:

But this:

Mmmmmm…okra is one of my favorite summer vegetables!  Tonight, we cooked up a big pot of stewed okra and tomatoes—it was delicious!

In a pan, I cooked half an onion in about a tablespoon of olive oil.  After about five minutes, I added the fresh chopped okra, along with a can of tomato sauce and a can of diced tomatoes, plus some creole seasoning, onion salt, and pepper.  All of this cooked for about 25 minutes, until the okra was soft and the tomato sauce had cooked down.

Served over brown rice:

Off to enjoy another O…The Office! 🙂

See you tomorrow!

I laughed out loud reading this…I live in “the big O”….Omaha, Nebraska! It’s almost as entertaining as Harry Met Sally.

I’ve only had okra once in my life. I remember it being kind of sticky. I should give it a try again. If I’m gonna claim I’m from the South, I better have a liking for okra.

This looks great! I’ll have to try it, yum. I love fried okra, but that’s the only way I’ve had it other than mixed up in soups.
