Bean Bowl

Hello, hello!

Well, I think we’re finally getting caught up on everything.  It always takes me a few days to get back to normal after a trip, but we’re definitely getting there!  Many of you suggested planning another trip to overcome post-vacation depression, but the truth is, the thought of more travel makes me exhausted!  We’ve had a pretty travel-intense summer, so I’m content to just relax at home…for now, anyway! 😉

This morning, we hit the gym early.  Ryan went to an 8:00 yoga class, and I did the elliptical for an hour, followed by a long sweat in the sauna.  I love that place, even in the middle of summer! Bring on the sweat.

After our workout, we headed home to do some work.  I took care of some online classroom business for a few hours, and then headed out with the dogs for a long walk on the lower trail. 

It was definitely one of those mornings where time slipped away from me…by the time I got home, it was 1:30, and I was starving!

Enter: the black bean bowl:

Leftover brown rice, black beans, salsa, and avocado.  Easy, fast, delicious.

Off to catch up on mail and what not.  I think we might venture over to State College tonight to see Please Give, which I’m excited about seeing.

      Yes!!!! I know! That cookbook has some AWESOME ideas for burgers– I think we’re going to make some when Lynn and Patti get here! Thank you so much!

    That’s one of my favorite single meals — I made it so often when I was on my own but not so much anymore. Time to whip one up!

    I’ve never been in a sauna. I think there’s one in my gym but it sort of worries me. How long do you stay in it?
    Also, beans and rice is the best combination on Earth!

      I usually stay in for 10-15 minutes…but I love sweating and being hot! Ryan won’t do it!

        It could be a family thing. I love heat, but I can’t tolerate a sauna at all.

    that looks so good…what kind of seasonding do you add to the rice and beans

      I didn’t add any, but you could certainly add some cumin to it– I think that would be really tasty!

    When I go into saunas I get anxiety that I won’t be ale to get out which really puts a damper on things.

    This is exactly what I ate for dinner last night. The only difference was that I used peach salsa instead of tomato. So delicious!!

    That is one of my favorite meals! Brown rice, salsa, black beans and avocado. I usually have some chicken in mine though! 🙂
