Year-Old Cake…

…tastes pretty good!

Tonight, for dessert, we dined on some cake from our wedding!  The cake survived a trip across the Atlantic, from Harbour Island to Florida and finally all the way home to Louisiana. 

We were expecting it to taste like…well, you know.

But—we were pleasantly surprised!  It tasted just as good tonight:

Before we had cake, we had dinner.  And what a dinner we had!

For a while now, I’ve been wanting to make the mushroom pecan burgers out of Colleen Patrick-Goudreau’s book, The Vegan Table.  My mom asked what we wanted for our last supper, and I knew exactly what to say!

Making the burgers wasn’t hard, my mom says, although it did involve a lot of different steps.  She says that the Cuisinart did all of the work for her.  I won’t post the recipe here, but it was a LOT of mushrooms, hoisin sauce, tamari, bread crumbs, parsley, sauteed onions and garlic, and pecans.  So, so good.  Colleen is a kitchen rock star.

Along with the burgers, we had tots:

And black bean and corn salad, also prepared by my mom.  Here’s the recipe.  It was really tasty!

Corn and Black Bean Salad


1 can black beans, drained and rinsed

1 can corn, drained

1 tomato, chopped

1 jalapeno, seeded and minced

1/2 cup minced purple onion

2 cloves minced garlic

2 green onions, chopped

1 bell pepper, chopped

1/2 cup cilantro, minced

juice of 2 limes

1/4 cup olive oil

salt and pepper to taste


Mix and enjoy!

Can’t believe our Louisiana trip is coming to a close! We’re going to be on the road allllllllll day tomorrow, but I might pop in with an i-phone update!

    I loved tater tots when i was a kid…omg 25 yrs ago..havent had one since about the 4th grade!

    the burgers. vegan burgers are always a ton of grinding, thank god for food proc’s or vitas!

    the cake was soooo pretty! and what a great shot of you guys feeding each other…aahhhhh so sweeet!

    Year old cake! I’m assuming you froze it!? I didn’t know icing froze, how cool 🙂
    Do you have the recipe for the mushroom burgers? They look super good 🙂

      We did freeze it! It was still tasty (amazingly!).

      The recipe is from Colleen Patrick Goudreau’s cookbook, The Vegan Table, so I can’t post it. But I LOVE that cookbook, if you’re looking for a new one!

    Our wedding cake is still in my parents fridge…18 months later. I wonder how gross it is?

    I’m so glad your cake was still great 1 year later! I went to a wedding this weekend and the cake was gorgeous but it tasted horrible…major disappointment. I might have to crash a wedding or two this summer to get my wedding cake fix!

    Veggie burgers and tots is like the best meal ever. Glad your cake was good. If you had a destination wedding, how did you take it home? Just on the plane?

    We just ate my sister’s year old wedding cake last weekend. It wasn’t terrible, but all the frosting fell off in chunks, which sucked. That’s my favourite part!

    This appears to be an Ashley-friendly vegan meal! That’s it, we’re definitely vacationing at Ginger’s. 🙂

    I love wedding cake. I’m already daydreaming of ours. You’re the first person I’ve heard say that your first anniversary taste wasn’t awwwwwwful.

    Yum…those burgers do look pretty amazing! I am glad the cake was good! Keith and I didn’t get to eat cake on our one year…we had an incident on our wedding day with our cake. As in my crazy MIL destroyed all the left overs! (LITERALLY TOOK A FORK AND DEMOLISHED THE ENTIRE BOTTOM LAYER) because she was too scared to have it in the house because she was scared she would eat some it! SERIOUSLY!!!!!

    your cake is gorgeous! i remember being shocked that our top layer still tasted good, even with a little freezer burn…

      Number 5, the ribbon for txeture, colour, contrast. For me I would bear in mind the theme, colour of wedding and always prefer colour on the cake as next to the wedding dress is the main attraction. x
