Tomatoes and Potatoes

Hello, hello! Happy Saturday!

Last night, Ryan and I went on a double-date with our friends Ellen and Dillon to one of my favorite Shreveport restaurants: Bella Fresca. 

Ellen and Dillon are friends of mine from high school.  They actually dated when we were in high school, then broke up for many years, and reunited a few years ago and just got married in December!  It was great catching up with themโ€ฆover several glasses of wine.  ๐Ÿ™‚

For dinner, I started with a salad of mixed greens, grapes, goat cheese, and candied pecans:

As an entree, I decided to just order a few sides instead of requesting a special vegetarian entree.  This ended up being a great decision!

Mmmmmmโ€ฆ.perfect! Sometimes with wasabi potatoes, you canโ€™t really tell that there is wasabi in the dish, but these were HOT! In a good way!

Not sure whatโ€™s on the agenda for today.  I need to turn my final grades in, and then Iโ€™ll be DONE with my first year of teaching at Penn State!  Woo hoo!!! It never officially feels like summer until I turn grades in.  ๐Ÿ™‚

    I’m so glad your first year is behind you! Woo! ๐Ÿ™‚ Your meal looks amazing. Every time you blog about being home it makes me want to take a trip to Louisiana (only if we can crash at Ginger’s, though).

    I simply LOVE potatoes, especially my own version of potatoe salad which I normally eat with turkey wings, yummy!!
