Miles and Miles and Minestrone

Well, I didn’t think it would happen, but after twenty hours of driving, two days in the car, and countless meals at Subway, we made it home!  Yay! 

The car ride actually wasn’t that bad—we listened to an audio recording of Jodi Picoult’s The Pact, which was about 18 hours long…we had to sit in the garage when we got home to finish it!  I had to hear the verdict—guilty or not guilty?!  I won’t spoil it for you, but it was a pretty good read listen.

Tonight, we had a delicious Italian dinner…no Cinco de Mayo celebration here! Oops!

Cocktail started off with wine and pepitos:

And dinner was homemade minestrone:

This soup was delicious! It had a simple vegetable broth base, and was filled with fennel, carrots, zucchini, onions, garlic, white beans, and tomatoes.

Along with the minestrone, we had a mixed greens salad:

and some French bread that my mom covered in pesto and fresh mozzarella, and then broiled for a few minutes:

We had some dinner guests as well:

Sophie!  Isn’t she getting big?  She was so alert too, fascinated by the ceiling fan.

My parents’ yard is all in bloom, and the night-blooming jasmine is SO fragrant.  I love it!

Before dinner, Ryan and I listened to my parents sing a song that they’d written about Sophie!

Too cute!  The song was really sweet—I was tearing up!

Today is an important day for me and Ryan, because…it’s our one year anniversary!  On this day last year, we were getting married in a small courthouse in Lafayette, Indiana!  Our actual wedding was in the Bahamas on May 22nd, so that will be our official anniversary, but May 5th will always hold a special place in our hearts.

    2 things stood out to me in this – 20hours of driving (ECK!!) and that strawberry cake!! Gosh does that look good..!! I’m glad you had a good time 🙂

    That is so precious that your parents wrote a song for Sophie!!! I love that book!! I’ve never tried an audiobook- I have a horrible attention span when it comes to listening, but I think it’d definitely make a long drive go faster.

        Yep, staying with mine! His parents live in Seattle, so we’ll probably go out there in August to visit. We have to wait a while for the nice weather 🙂

        My parents are a little…easier to deal with, we’ll say. 😉

    Yay for making it down to Louisiana safe and sound and getting to see that beautiful little girl. I just had to call my mom over here to show her that jasmine. We have a tall birdhouse in our backyard that it would look perfect climbing up. And I can’t believe your whole family is so creative! What a super sweet song. 🙂

    That dinner looks amaze!!!! I come from an Italian family, however, I never had the bread covered in pesto and mozz–O. M. G. that is something I need to tell my Nona about for the next holiday =)
