Guess Who’s Coming to Dinner

Ryan’s aunt Kristi had a meeting in DC this weekend, so she extended her trip and is spending today and tomorrow with us here in Altoona!  We hardly ever get visitors (hint, hint), so we’re really excited to have her here!

Plus, Kristi is a major dog lover, so the dogs have been getting kisses and belly scratches out the wazoo. 

Before Kristi got here, I sat down to a very random, but very delicious lunch of broccoli, dried plums, carrot sticks, Mary’s Gone crackers, and Laughing Cow cheese.  Random, much?

Kristi got here around 3:30, and we had fun showing her around campus and catching up.  Before too long, it was time for dinner!  On the menu?

Taco Salad!

I wanted to serve something that wouldn’t leave us with a fridge full of stuff, since we’re leaving mid-week to go to Louisiana.  This fit the bill perfectly.  Our spread included: romaine, tomatoes, red bell peppers, sharp white cheddar, salsa, guacamole, black beans, and chips.

Mmmm…perfect guac.  This had: 2 avocados, juice of 1 lime, 1/2 cup chopped cilantro, 1/4 cup minced red onion, and salt.  You could add cayenne pepper for an extra dose of heat, if you were so inclined. 

I think we’re going to play some cards tonight.  Not sure what’s on the agenda for tomorrow, but it’s supposed to be nice, so hopefully something outdoors! 

I also want to say: HAPPY BIRTHDAY MOM!!!!

It was a sunny, spring day back in 1940 when my mom came into this world. 

Bahaha!  I kid, I kid! Don’t worry Mom…I won’t tell them how old young you are. 

Obviously what matters most is that my mom is young at heart—thus her love of Glee and TWSS jokes.  My mom is the coolest. 

And she ain’t too shabby looking either.  Here we are, cutting a rug at my sister’s wedding a few years ago:

Yow!  And yes, that is my husband “raising the roof” in the background.  Nice dance moves, honey!

Beautiful ladies!   I’m lucky to come from a family of such strong, amazing women!  Happy birthday, Mom!!!

    It is fun to have guests! Your taco salad looks delicious. In reference to a few postings back, we had breakfast, lunch and dinner Monday through Saturday. On Sunday, we had breakfast, dinner and supper. I think we were a southern oddity! Since I’ve had my own kitchen, it’s breakfast, lunch and dinner every day.
