Non-Meat Taco Meat
Hi friends!
I disappeared for a few days! It’s been kind of wacky around here. I got my first round of freshman composition essays on Wednesday (50 essays about FOOD! Better than 50 essays about why the drinking age needs to be lowered to 18, I suppose), and had set aside three hours to grade on Thursday afternoon, but then our babysitter canceled about 30 minutes before she was supposed to show up.
Womp womp.
Anyway, I ended up staying home with Lila, who was in *quite* the mood. In short, it felt like a long day.
But then, on Friday, I got quite the treat—another canceled morning of classes! We were supposed to get freezing rain yesterday, so late on Thursday night, they ended up canceling any classes before 10 o’clock. I knew teaching in the earliest slots was going to pay off somehow!
It was ridiculous anyway, because when we woke up on Friday, it definitely wasn’t raining and it definitely wasn’t freezing—but hey, who am I to question a Friday off?
Anyway, I was able to take that time and grade all of the essays, so I’m in weekend mode now!
Last night, we scrounged up the last of the produce in the refrigerator for another round of tacos—this time, no meat was involved. And, I think I liked these better than the beef tacos we had earlier this week.
No Meat Taco Meat
6 cloves garlic, minced
1 small red bell pepper, chopped
1 small yellow bell pepper, chopped
2 cups frozen boca ground crumbles
1 cup cherry tomatoes
3/4 cup chopped cilantro
1 tsp. cumin
1/2 tsp. paprika
1/2 tsp. turmeric
garlic salt to taste
Directions:
Heat two tbsp. olive oil in a pan. Add garlic and bell pepper, cook for about 10 minutes over medium heat. Add boca crumbles and tomatoes. Cook over medium heat for about 10 minutes. Add cilantro and spices, adjusting salt to taste. Cook for another 5 minutes to combine.
Seriously easy:
…and seriously delicious. We had ours in bowls with chips, salsa, guac, and Greek yogurt “sour cream.” Great way to clear out the fridge!

I sometimes make taco meat like this and Jason likes it even though he likes meat.
I am SO making this! I will have to make it when J is not around, because he doesn’t like peppers

I have a few teachers in my family too- I’ve been wrangled into helping with marking on a few occasions so I can kind of see how daunting it must be at the beginning of stack of assignments- but essays on food sound pretty cool, though.
The turmeric, paprika and cumin combination sounds so delicious! I am definitely making this; it sounds like it would be great in a wrap too!
Idk, I’m not that crazy about ground beef, but I really like it in tacos. This looks pretty legit though! Yay for a Friday off… we got snow, but of course only after I was heading home for the weekend. Why can’t it ever snow when I’m supposed to be at work
