Kale & Squash Enchiladas (and a baby smile!)
Last night, I made some delicious veggie enchiladas. It feels SO good to be back in the kitchen a little more. This meal took about 25 minutes to put together (not including cooking time), and was really tasty.
First, I made the enchilada filling with a little help from this sauce powder:
I used half of it to season the veggies (yellow squash, zucchini, and kale), and saved half to make a sauce to pour on top of the enchiladas.
Once the veggies were done cooking (about 15 minutes), I divided the filling evenly among four whole wheat tortillas:
topped the tortillas with sauce:
…and then finished it all of with grated cheese:
I baked the enchiladas for another 15 minutes until the cheese was nice and melted:
Done! Delicious veggie enchiladas!
Delicious and (relatively) nutritious!
And, in other news—remember how I complained that we were having trouble capturing one of Lila’s smiles on camera? Well, we finally got one!

Those enchiladas look awesome – I love the Simply Organic sauce mixes – we use the guacamole one all the time, but I’ve never noticed the enchilada one before!
I made some black bean and tempeh enchiladas over the weekend. I love the idea of the squash. Need to remember that one.
For phone pictures, those are pretty good! And yum! I am a huge fan of enchiladas but I’ve never tried vegetarian ones with that veggie combo going on!
