Friday, Friday, Gotta Get Down on Friday
Everybody’s looking forward to the weekend…
Am I the only one who never really gets tired of that song? Every time Friday rolls around, I can’t help but hum it to myself…and I secretly love it.
It’s been a few blog-less days here, and honestly, you haven’t missed much. Some of us have been doing this:
…while some of us have been grading a lot. Both equally fun. Although, to be honest, I can’t put all the naps on Baxter. I’ve been taking my fair share too. People say that the third trimester feels very similar to the first, and in my case, they both turned me into a mega sleep monster. I usually feel like I could stop and take an hour-long nap at any given moment…and oftentimes, I do. Nap now, right?
In other baby news, we had a doctor’s appointment on Tuesday, and little miss is doing great. We’re right on schedule, and will hit the full-term mark in just a few weeks. Can you believe it? I really can’t!
In non-baby news, I spent yesterday afternoon putting this together:
I knew I needed to make these cookies after seeing them on The Culinary Couple. We’re having some friends over for dinner tonight, so it seemed like the perfect opportunity to give them a whirl. The dough is sitting in the fridge right now—it has to chill for 24 hours. I’ll let you know how they turn out…but something tells me they’re going to be pretty awesome. And that something is the fact that I dug into the chilled dough last night and made myself a giant individual cookie, and it was pretty awesome.
We’re also having beef stew, so that’s what I’ll be working on today. It’s kind of a strange choice, seeing as it was 70 degrees here yesterday (!!!SPRING!!!!), but I’d already decided on it a few days before it turned so warm, and now I can’t get it out of my head. Beef stew it is.

I feel like it’s a rite of passage or something to test out those NYT cookies. I still haven’t done it yet but everyone seems to think they’re amazing. I just can’t imagine the torture of chilling dough for 24 hours. When I get a chocolate chip cookie craving it needs to be satisfied pretty quickly or things get ugly.
It was definitely a battle of willpower last night to only bake one!

And it was 80+ degrees here yesterday. Insane.
Please keep up posted on the nitty gritty on these cookies. I have never made the NYT recipe to the letter of the law, always tweaking and Ive read you have to follow all steps from chilling to the size (huge!) of each cookie when they bake…curious about your results!
