Out the Door

Hey guys! Gotta post quick and hit the road.  I’m walking up to school again today—hopefully I won’t be quite as rushed as last week.  I’m leaving a little earlier, so I might have some time to spare!

Lunch is quick (and on the small side because I prepped for our dinner tonight this morning, and ended up taking quite a few tastes of our dinner in the process…it’s going to be a good one!).  One cup of chickpeas mixed with a fourth of a cup of Greek yogurt and a half a cup of salsa.  Easy, fast, and tasty!  I just hope it doesn’t spill into my bag!

I’m also bringing this apple and pb packet for snacking later. 

See you tonight for a fishy dinner… :-)

    I have that exact same peanut butter pack in my drawer! A tad annoyin that I don’t eat honey..but whatevers :P

    I keep forgetting how forgiving and versatile and yummy chickpeas are. Gotta crack that bag of chickpeas in my pantry open!

    I love how simply your lunch is and yet I bet it is so filling! Doesn’t salsa make everything taste better?

    I agree with Sophia…I totally forget how great chickpeas are!

    Interesting chickpea combo – but yum yum. Need to give that one a try for sure.

    I’m pretty convinced that one could mix chick peas with anything and they would be delicious!

    Love the PB packet, so easy and perfect for traveling. And I could eat chickpeas all week and not get tired of them.

    talk about packing a punch with the chickpea mixture… I like it! :) I bet it would be really good with fresh cilantro or something.
