Crazy Pesto, Crazy Pasta
Hello, hello!
This afternoon, I piddled around the hose, cleaning up and taking care of this and that. Around 4, my friend Ellie called and we caught up for a little over an hour. Living so far away sucks, but friends are only a phone call away!
Around 6:30, I got started on some dinner. I didn’t really have a plan, but pesto sounded like a good place to start. Only problem? No basil. No pine nuts. No parmesan. Huh.
Never one to accept defeat, I created this alternative pesto:
Lemony Parsley Cashew Pesto:
And it was damn good. The cashews added a slightly sweeter flavor to the pesto…I know it sounds like a weird combo, but trust me—this one’s a keeper!
Into the food processor went: 1 bunch of parsley, the juice of 1 lemon (about 1/3 cup), 1/4 cup olive oil, 1/3 cup raw cashews, and salt and pepper to taste.
To go along with this crazy pesto, we opened up one of our souvenirs from Italy—crazy pasta from Florence!
Isn’t this striped pasta so cute? We got it at the central market. We tossed the pesto and pasta with some chickpeas, and dinner was served!
Again, there are a lot of strange flavors going on here, but this pasta dish was really tasty!
Now we’re watching the movie Extract with Jason Bateman (love him). It was written by the same guy who wrote Office Space and King of the Hill, so we have high hopes for it. We shall see.

Exactly!! It wa like it s approaching funny, but then it took some wrong turns and just ended up kind of bland instead!
