Crazy Pesto, Crazy Pasta

Hello, hello!

This afternoon, I piddled around the hose, cleaning up and taking care of this and that.  Around 4, my friend Ellie called and we caught up for a little over an hour.  Living so far away sucks, but friends are only a phone call away!

Around 6:30, I got started on some dinner.  I didn’t really have a plan, but pesto sounded like a good place to start.  Only problem?  No basil.  No pine nuts.  No parmesan.  Huh.

Never one to accept defeat, I created this alternative pesto:

Lemony Parsley Cashew Pesto:

And it was damn good.  The cashews added a slightly sweeter flavor to the pesto…I know it sounds like a weird combo, but trust me—this one’s a keeper! 

Into the food processor went:  1 bunch of parsley, the juice of 1 lemon (about 1/3 cup), 1/4 cup olive oil, 1/3 cup raw cashews, and salt and pepper to taste.

To go along with this crazy pesto, we opened up one of our souvenirs from Italy—crazy pasta from Florence!

Isn’t this striped pasta so cute?  We got it at the central market.  We tossed the pesto and pasta with some chickpeas, and dinner was served!

Again, there are a lot of strange flavors going on here, but this pasta dish was really tasty!

Now we’re watching the movie Extract with Jason Bateman (love him).  It was written by the same guy who wrote Office Space and King of the Hill, so we have high hopes for it.  We shall see.

    Let us know how Extract is! I really wanted to see it when it came out.

    That has got to be the cutest pasta I have seen since the alphabet kind I ate as a kid- love it!

    I love the parsley twist on pesto. I bet it was delish!

    wow that looks like such a fun dinner! I love the addition of cashews to the pesto and the chickpeas to the meal…not to mention all of those fun colors! :) Makes me happy

    That pasta is gorgeous! And that pesto? YUM! I’ve been eating cashews like it’s my job and mixing them into just about everything…why not pesto?!

    Love that pasta! And, the pesto sounds really good – way to be creative! (We’re having leftover mushroom burgers tonight – remember those? I can’t wait!)

    oh fun pasta! I want some of that! That would be great for an “Alice and Wonderland” themed party or something :) Love pesto too, just made an arugula version myself a couple of days ago.

      Unfortunately, it wasn’t very funny :-( We both love Office Space, so we had high hopes, but it was just kind of boring. Boo!

    what did you think of Extract? Me & the bf thought it had potential but missed the mark :-/

      Exactly!! It wa like it s approaching funny, but then it took some wrong turns and just ended up kind of bland instead!
