Year-Old Cake…
…tastes pretty good!
Tonight, for dessert, we dined on some cake from our wedding! The cake survived a trip across the Atlantic, from Harbour Island to Florida and finally all the way home to Louisiana.
We were expecting it to taste like…well, you know.
But—we were pleasantly surprised! It tasted just as good tonight:

Before we had cake, we had dinner. And what a dinner we had!
For a while now, I’ve been wanting to make the mushroom pecan burgers out of Colleen Patrick-Goudreau’s book, The Vegan Table. My mom asked what we wanted for our last supper, and I knew exactly what to say!
Making the burgers wasn’t hard, my mom says, although it did involve a lot of different steps. She says that the Cuisinart did all of the work for her. I won’t post the recipe here, but it was a LOT of mushrooms, hoisin sauce, tamari, bread crumbs, parsley, sauteed onions and garlic, and pecans. So, so good. Colleen is a kitchen rock star.
Along with the burgers, we had tots:

And black bean and corn salad, also prepared by my mom. Here’s the recipe. It was really tasty!
Corn and Black Bean Salad
Ingredients
1 can black beans, drained and rinsed
1 can corn, drained
1 tomato, chopped
1 jalapeno, seeded and minced
1/2 cup minced purple onion
2 cloves minced garlic
2 green onions, chopped
1 bell pepper, chopped
1/2 cup cilantro, minced
juice of 2 limes
1/4 cup olive oil
salt and pepper to taste
Directions
Mix and enjoy!
Yum!
Can’t believe our Louisiana trip is coming to a close! We’re going to be on the road allllllllll day tomorrow, but I might pop in with an i-phone update!

We did freeze it! It was still tasty (amazingly!).
The recipe is from Colleen Patrick Goudreau’s cookbook, The Vegan Table, so I can’t post it. But I LOVE that cookbook, if you’re looking for a new one!
Our wedding cake is still in my parents fridge…18 months later. I wonder how gross it is?

I’m so glad your cake was still great 1 year later! I went to a wedding this weekend and the cake was gorgeous but it tasted horrible…major disappointment. I might have to crash a wedding or two this summer to get my wedding cake fix!

We just ate my sister’s year old wedding cake last weekend. It wasn’t terrible, but all the frosting fell off in chunks, which sucked. That’s my favourite part!

Yum…those burgers do look pretty amazing! I am glad the cake was good! Keith and I didn’t get to eat cake on our one year…we had an incident on our wedding day with our cake. As in my crazy MIL destroyed all the left overs! (LITERALLY TOOK A FORK AND DEMOLISHED THE ENTIRE BOTTOM LAYER) because she was too scared to have it in the house because she was scared she would eat some it! SERIOUSLY!!!!!
