Dog Days of Summer
It’s not even June, but it already feels like the dog days of summer.
Of course, that might have something to do with the company we’ve been keeping:
And of course, these dogs too:

Along with our “hot dogs,” we had Cilantro Lime Honey Sweet Potato Fries:
Mmmmm….these were an experiment, and they were good! To make these, I simply mixed together 1/4 cup lime juice, 1 tbsp. honey, 1 tbsp. olive oil, and 1/4 cup minced fresh cilantro, and poured it over the raw sweet potatoes, then baked for 20 minutes at 400 degrees. The lime juice and cilantro flavors were actually really subtle after these cooked. Just an extra little thing to make you go, “Hmmm!” Perfect!
We had another experimentation recipe last night as well:
Grilled Onion, Blackberry, and Mango Salad
Ingredients
1 red onion, cut into thick slices
1 cup chopped mango
1/2 cup blackberries
1/2 cup chopped cucumber
juice of 1 lime
Directions
To prepare the onions, drizzle with salt, pepper, and Cajun seasoning (such as Tony’s), then grill for 10-15 minutes, flipping occasionally (you might need to use a grill pan for this so that the onions don’t fall through the grill). Once onions are cooked and slightly cooled, use your hands to break them up into individual rings, then combine with the rest of the ingredients. Season to taste with salt and pepper, and toss to combine.
Yum!
This salad was SO good! It was an unusual combination of flavors, but they went really well together.
All in all, ’twas a great meal!

Aw, love the pup pictures! The sweet potatoes look divine and I love the idea of putting onions with fruit, they’re awesome in a watermelon “fire & ice” salsa. Looks like we’re due for a crazy weathered weekend here.
