My Big Fat Greek Dinner
Hello, hello! How has your afternoon been?
We had a great time with this young one:
She was a perfect angel!
For dinner tonight, Greek was on the menu. We enjoyed a wide variety of foods!
First up: grilled veggie kebabs, seasoned with olive oil, salt + pepper, & oregano.
I also made a tzatziki-esque dipping sauce for the veggies. In a bowl, I combined: 1 container of 2% Greek yogurt; 3 tbsp. lemon juice; 1/4 cup minced red onion; 1/4 cup chopped cucumber; 2 tbsp. mined fresh oregano; and salt + pepper to taste. Yum!
We also had pita wedges + hummus:
and Greek salad with romaine, olives, cucumbers, red onion, and feta:
A great meal indeed!
See you tomorrow, friends! I’m going to try out my new shoes for a run tomorrow morning, if all goes well!
