Suddenly Summer
Mother nature must be feeling very generous, because the rain and chill from last weekend seem worlds away. It’s positively summery outside! I love it—little kids are playing in the yards, people are grilling…ahhhhh, summer.
For dinner tonight, we wanted to use up some of the produce from our fridge…it was a hodge-podge of ingredients, but the final meal was actually really tasty!
I sauteed up half an onion, a few cloves of garlic, plus two diced zucchinis in a bit of olive oil, along with some dried basil. While that was cooking, we also cooked up a cup of some cute shell pasta we got during our trip to Amish country a few weeks back.
Once the veggies were done cooking, I placed them in a serving bowl, along with grape tomatoes, kalamata olives, fresh spinach. I poured the hot pasta right over the veggies so that that spinach would wilt down, along with a squeeze of lemon juice, another drizzle of olive oil, and about a fourth of a cup of bread crumbs. Done!

Some of you have asked me about these serving utensils before—they were a wedding gift from my bff Sarah (also a blog reader!). Love ‘em, ya! Here’s a pic of me and Sarah performing karaoke on a roadtrip we took from Seattle to LA a few summers ago. Song of choice? Boys II Men, “I’ll Make Love to You,” natch.
Just to up the ante a bit, I also have to tell you that we are performing this karaoke IN THE 90210 BEACH HOUSE!!! That’s right. We got connections, yo. Check it:
The house was only used for the exterior shot, but still…pretty cool! One of our friends was house-sitting for the person who now lives in that apartment, so we got to hang out there on our last night of the trip! Our flight left at 6:00 am, so instead of sleeping, we just stayed up all night and sang karaoke. Brilliant…absolutely brilliant.
Anyway…back to the food!
We’re about to watch The Proposal, which was supposed to be cute. After watching The Hurt Locker last weekend, I’m excited for a movie that involves a little less bomb squad and a little more Betty White. I think we’re both kind of worn out from our day in the sun, so it will probably be an early night!

I am pretty jealous of karaoke in the 90210 house…I used to LOVE that show. The new cast can’t hold a candle to the classic version.

That dinner looks so fresh and delicious! I thought the proposal was cute but I am also a huge Ryan Reynolds fan. He can make the most awkward faces and still make me swoon…and he ran a marathon (that doesn’t hurt…). Hope you had a great nights sleep!
