Pass the Pasta

Hello, hello!  Almost to the mid-point of the week, eh? 

This afternoon, I followed through with my plans of taking the dogs on a long walk.  We covered about 3 miles as I listened to Madonna on my i-pod…last week’s Glee totally relit my Madonna fire.  Is there anything better than walking in the sunshine with two great dogs, knowing summer is right around the corner, while listening to “Cherish”?  I think not.

Except maybe this:

Mushroom Pecan Spread

Ingredients

1 8 oz. container baby bella mushrooms, coarsely chopped (aka creminis)

1 tbsp. butter (I used Earth Balance vegan spread)

1/3 cup pecans (you can use salted or unsalted, but if they are salted, you might need to cut back on the amount of tamari)

1 tbsp. tamari

Directions

In a pan over medium heat, melt butter.  Add mushrooms and saute for 10-15 minutes, until mushrooms are soft and glistening.  Meanwhile, toast pecans in a 200 degree oven for 2-4 minutes, until they are toasted but NOT burnt—check on them frequently, as they can burn quite easily. 

Once mushrooms are cooked and pecans are toasted, combine all ingredients in a food processor and pulse until smooth.

Not the most attractive dish, but so, so tasty!

It would be great with crackers as a dip, on a piece of crusty bread as a sandwich spread, or…

In pasta!

We cooked whole wheat pasta along with a cup of shelled edamame (seasoned with a few shakes of soy sauce), then served the pasta over a bed of spinach with a big dollop of the spread.

Mmmmm….a great meal indeed!  We kept commenting on how delicious this spread was—and so simple to make!

In other news, I’m glad y’all liked that picture of my parents…they look so young and carefree, don’t they?  Ha, that was before my sister and I came along!  They had no idea what was in store for them!

It’s funny that y’all thought I look so much like my mom—sometimes people say that it’s my dad I look most like! Sometimes people say I look nothing like my sister…and then other times people will say that my sister and I could be twins!

Who do you look like in your family (if anyone)?

As far as our own little family goes, I think Ella totally looks like me:

    What a great dip! you are the queen of creative, vegan/veggie savory dips and spreads..you’re awesome at them! Raw balls, Ive got ya beat :)

    So glad the doggie is doing better!

    And I look like my father’s side, my paternal g’mother. Now that i am an adult. But as a child, I looked like no one. I was the milkman’s kid. LOL

    Ouu that sounds yummmy.
    In my family, my sister and me are four years apart, but everybody thinks we’re twins, and people can tell im my dad’s daughter just by looking at me, lol.
    As for my babies, my ellie is my mini me, and Josie is my hubby’s look alike.

    When I see pictures of my mom when she was my age we could be twins! The crazy thing is I also look a LOT like one of my dad’s sisters, so I guess, a little bit of both? I could never tell my brother that we were adopted since we look alike and we’re both such a good mixture of our parents!

    how creative you are! i love the idea of a mushroom pasta spread.
    i look like my parents combined. it’s eerie. and the girl version of my brother. which is kinda gross.

    People say I look like my dad, cos I’m tall with big feet :P ButI really hope I don’t…I don’t like my dad!!

    My sister and I are both half-and-half: we each have about the same features from our mom and dad. She even gets her red hair from both of them!

    I look like my mom, but have my dad’s nose and toes :) My height comes from my dad’s side as well!

    That spread sounds really good, and I’m not even a huge mushroom person. Yum!

    I’d say I look most like my Dad, but I hear that I look like my Mom a lot too. My brother and I have extremely similar facial features, yet people always thing we’re married when they see us together. That’s creepy.

    haha love the puppy pic! :) it’s weird- some people think my sister & i look exactly alike while others don’t see a resemblance at all! i think it depends on how well you know us.

    I have been OBSESSED with Madonna since that episode of Glee! My mom had one of her greatest hits cd’s tucked away in a cabinet, and I uploaded it to my iTunes and have been jamming out to her almost every day. I feel like all of America must have done the same…

    I totally thought you looked like your mom, even though I didn’t comment on that post. Most people think that my sister and I look a lot alike, but I don’t really know which parent we take after. It’s a mixture.

    I look kinda like my mom and my dad but mostly I look like no one. My younger cousin and I look JUST alike but yet nothing like anyone else in our family. We are oddballs.

    if you see a pic of my mom when she was my age you would think its my pic. I also look very much like my dad… I guess I resemble both… my sis and I look alike… even though she has light hair and green eyes… but most people think she is the older sis… (she is 6 yrs younger… ouch)

    Tough to say who I look like more, guess my dad with my mom’s face shape. I’m kind of an odd combo between them I guess. The spread looks wonderful and a great way to serve it also.

    Haha, they do say that people look like their dogs.

    I think I look a lot like my brother. He’s only a half-brother on my dad’s side so I guess I look like my dad? But a lot people think I look like my mom even though she and I both don’t see it.

    When I saw the photo of your parents yesterday I thought to myself how much you look like your Mom (I see the resemblance in Ella too). I’m a stretched our version of my own Mama, she’s 5’1 I’m 5″11″.
