Cat Prayers and Cabbage

Hey guys! Whew—well, it took all afternoon, but I got all of my grading done for my online classes.  I feel like my brain is a little fried, but it’s worth it to be done! I’m glad I got in a good run this morning, because my butt was glued to my office chair (aka the living room couch, but whatever) alllllllll afternoon.  The rain kept up all afternoon as well, so at least I wasn’t tempted by pretty weather.

Around 6:00, I finally finished (woo hoo!!!), and got started on our simple but delicious dinner: Asian-braised slaw and baked tofu. 

Asian-Braised Slaw

Ingredients

1/2 head cabbage

1 tbsp. olive oil

1 tbsp. soy sauce

1/2 tsp. ground ginger

1 tsp. plum wine vinegar

1 cup water

1/3 cup orange juice

1 tbsp. sesame oil

Directions

In a pan, heat olive oil.  Add cabbage and saute for a few minutes.  Add soy sauce, ginger, vinegar, water, and orange juice, and bring to a boil.  Boil for a minute or two, and reduce heat to a simmer.  Cover and simmer for twenty minutes, until liquid is absorbed and cabbage is soft. 

Remove from pan and drizzle with sesame oil. Toss and serve.

Baked Tofu

Press one firm tofu cake for at least two hours, then pat dry.  Cut tofu into one inch cubes, and toss with: 1 tbsp. sesame oil, 1 tsp. plum wine vinegar, and 2 tsp. soy sauce.  Bake at 350 degrees for 30 minutes, flipping once halfway through.

Mmmmm….a delicious pairing!

On a much sadder note, my sister’s dear cat Oscar was hit by a car last night.  They thought he was okay, but she took him to the vet this morning and he seems to be having internal troubles, specifically with his kidneys.  They’re keeping him overnight at the vet’s office.

Oscar is a beloved member of our family…please send prayers and good thoughts his way!  We’re hoping that he pulls through!

    Oh, that’s so sad. I’ll definitely keep Oscar in my thoughts. Having just left my pet this afternoon, I know I’d be devestated if something like that happened

    Hugs and prayers to your sis and the family..that’s such sad news :(

    On other matters, the tofu looks great and the cabbage…great way to use it up! Cabbage seems to multiply once you cut into it :)

    Oh no! I hope Oscar pulls through. A friend at work hit her cat pulling out of her drive through over the weekend. So sad and so ironic to hear of this twice in a day. Kitty prayers that direction…lots! I’m an animal lover :)

    P.S. Dinner looks AMAZING! So colorful!

    Thanks for putting Oscar on the blog – all the prayers and good thoughts surely will help. He’s a big, strong boy with a big heart, so maybe he’ll be lucky this time!

      Emily – Katherine got Oscar 11 years ago, when she lived in Ft. Worth, so no relation to Five Cat. I have Lola here in Shreveport, and she was taken from the same house as Five, (Lola was originally called “Nine”, but Anna changed it to Lola) Five was killed by some roaming dogs about a year ago – very sad – but we still have Lola here and she is doing very well – rarely gets off our front porch!

    That dinner looks amazing, and like something my husband and I would eat :-) He just started liking tofu in this past year and I am SO happy about it!

    Poor Oscar! I feel so bad :( I am hoping for the best for him! I know our cat is a member of the fam and I would be so sad if something happened to him.
