No Queso-Dilla
Evening! I can’t believe the weekend is over…where did it go?
After lunch, Ryan and I headed to the grocery store (and picked up some stuff for some fun meals this week!), and then got to work cleaning the house. As I vacuumed and mopped, Ryan worked on cleaning the kitchen…where disaster struck!! He sliced his finger open cleaning the spiralizer…eek! It cut right through his nail—that thing is sharp! After applying pressure for about thirty minutes, the bleeding stopped, but it was like a horror movie in the kitchen for a while. Alright, it wasn’t exactly Psycho…but it was pretty gross!
Anyway…moving on from blood and gore to something more fun: hummus! Sorry, it’s kind of hard to make a smooth transition from blood to hummus, but I’ll try.
This hummus was awesome! After seeing Kath’s cilantro pesto, I’ve been dreaming about cilantro hummus for a few weeks. For dinner tonight, I decided to give it a whirl.
Cilantro-Lime Hummus
Ingredients
2 15 oz. cans chickpeas, drained and rinsed
Juice and zest of 1 lime
1-2 cups fresh cilantro
1 tbsp. tahini
1.5 tbsp. olive oil
1/4 tsp. cayenne pepper (you can use more depending on how much kick you want)
1/4-1/2 tsp. salt (according to taste)
1/4-1/2 cup water
Directions
In a food processor, combine all ingredients except for the water. Pulse for about 5 minutes, scraping down the edges, until mixture is smooth. If the mixture is still too chunky, you can start streaming in water (or more olive oil) until it really begins to go smooth. Process until the hummus reaches desired consistency.
Delicious!
The lime flavor is really subtle, and perfectly compliments the cilantro. I could see this being really good with other herbs as well—parsley would taste really fresh! This hummus would also be equally good with pita chips or tortilla chips.
But we had even bigger plans for it…
No Queso-Dillas!
We slathered an Earth Balance-buttered multi-grain tortilla with the cilantro hummus and topped one side with spinach and bell peppers:
…folded it over, and grilled it up in a pan until both sides were nice and toasty.
Delicious, easy, and we didn’t even miss the cheese (I promise!).
Well, that’s it on this end. My dad just got back from Thailand (!), so I’m about to catch up on the phone with the fam. Glad you all enjoyed that picture of Sophie…she’s a cutie! I think she looks like me!

Poor Ryan! I hope his finger is OK – cutting through the nail, it will probably take a while to heal. Enjoyed talking to you last night (although, I didn’t get my fair share of conversation, at all!!) I’ll call you from Mississippi (I leave in about 15 minutes). That hummus sounds fantastic. I read a recipe in the recent Vegetarian Times for a hummus quesadilla that I’ve been wanting to try. Definitely must give it a try now.

Delicious!!!!! I just love cilantro and lime, ever since I made guacamole this weekend, I have been on a kick with that flavor combination! I want to make this asap. Especially since I have all the mexican food in my fridge right now, a different spin on a quesadilla would be brilliant!

So sad the weekend is gone! Sigh, back to the grind. The no queso-dillas look great, I’ve tried them with hemp nacho “cheeze” sauce before and they came out great.

This sounds simply divine! Can’t wait to make these! When grilling in the pan, what do you use and find works best — cooking spray, olive oil? What did you use for these? They look perfectly grilled!
We used Earth Balance, a vegan margarine-like spread. But you could certainly use cooking spray, olive oil, or butter as well!
Ah-ha- you did already say this in your post! Because I’m not familiar with the Earth Balance products, I think I read that to mean the “flavor” of tortilla! D-u-h! Gotcha and thanks for the response and always delightful recipes!!!
