Ugly But Delicious
Hello! Well, take your dog to work day worked out swimmingly! The dogs were perfectly behaved, other than a few errant barks here and there. In between classes, I took them on walks, and we ended up covering about 5.5 miles total!

When we got home, I was greeted by not one, but TWO Easter packages! How fun! Both my mom AND Ryan’s mom sent us a package for the upcoming holiday. Check out all the cute stuff we got:

Dinner tonight was rather unfortunate looking…but it tasted great!
Curried Tofu and Broccoli Salad
While I was up at school, our tofu block was pressing in our handy-dandy tofu press. When I got home, I cut the tofu into one inch cubes and got to work on the rest of the salad. For the curry “sauce,” I put 1/2 cup lowfat cottage cheese, 1 tbsp. yellow curry, and 2 tsp. plain almond milk into the food processor, along with a dash of garlic salt. Process until smooth, and voila: curry sauce! I poured the sauce over the tofu, along with 5 chopped dates, 1/8 cup chopped raw cashews, and 2 tbsp. unsweetened coconut.
Meanwhile, I boiled a pot of water for the broccoli. Once it was boiling, I put the broccoli in for just a few minutes—just enough to soften the broccoli, but keep it crisp! Running it under cold water after draining it helps to cut off that cooking process as well as preserve the bright green color.
Once the broccoli was done, I tossed it with the rest of the ingredients, and dinner was served!
I know this dish doesn’t look pretty, and it wasn’t, but it was dang tasty! I am really starting to crave the taste of uncooked tofu. I love it!
Ryan brought me some beautiful tulips yesterday! What a guy!
Well, that’s all for tonight! I have a slight headache and am feeling more tired than usual, which I think might be the lack of coffee in my life. It’s amazing how quickly our bodies build up addictions to things like caffeine. See you tomorrow! I hope I’m not *too* sore from Jillian’s workout. Eek!

I have that Jillian video.. and can’t finish it either. You got way farther than I have! This makes me want to attempt it more since I only do it once in a blue moon.. I like to lie to myself and say I avoid it because I find it boring but really, I just find it hard.
