Evening, folks! I’m glad Tuesday is over…for some reason, this day felt like a lonnnnnnng one.  The weather outside was windy and cold…I’m sure that had something to do with it.

When I returned home from teaching, I was ready for a fast, easy dinner…luckily, that was just what we had planned!

Our dinner tonight was inspired by Amy’s Brown Rice Bowl, one of my all-time favorite frozen dinners.  Amy’s bowl has tofu, mushrooms, carrots, and broccoli.  The veggies we used were a little different, but the idea was the same.

In a pan, I sauteed a carton of mushrooms (baby bellas) in a bit of olive oil.  To that, I added a simple sauce (1 tbsp. shoyu sauce, 1 tbsp. mirin, and 1 tsp. minced ginger), as well as a half a cup of chopped green onions and a few big handfuls of spinach.  I let that cook for about 5 minutes, and then added a cup of water to dilute the sauce a bit and deglaze the pan. 

We made extra brown rice from one of our weekend dinners, so that was ready to go.  We topped the brown rice with the veggies and a few slices of perfectly ripe avocado, and voila!  Dinner was served!

Mmmm…very good!  There’s something about sauteed mushrooms that is just so tasty and satisfying.  Must be that umami flavor. :-)  

I followed dinner up with a Weight Watcher’s ice cream bar.  I’m loving my diet ice cream desserts lately.  Hey, whatever works to curb that sweet tooth that always strikes.

I think I’m about to hop in the tub and read some more American Wife.  I’m really liking it, about 200 pages in!

    I forget avocado can be eaten not in pudding, haha.
    Does that really fill you up? For some reason, brown rice just does nothing for my stomach, and without much protein I’d be ravenous

      The avocado/brown rice combo actually fills me up really well.

      Plus I had a big spoonful of barney butter after my dessert :-)

    slow cooker. i feel the same way about those that even though i want one b/c i like to hoard appliance LOL that is just one i will never use. i like RAW food, the opposite of slow cooking. that said, if i could find a way to make idiot proof dinners in in for scott that dont involve first adding a can of salsa or bbq sauce, hello junk and sodium, to the crock pot, i would get one…

    I loved American Wife! It was a little hard for me to dissociate the Laura Bush thing during some of the sex scenes though… (major shudder)

    The avocado on top of your dish looks so perfectly ripe- yum!! I’m actually not a mushroom person, but I wish I were! I always try them in hopes of liking them, but no dice.

    Dinner looks so fresh and wonderful! Have you tried Skinny Cows or the new mini Snickers ice cream bars? Those are my summer vices!!

      I love the skinny cow ice cream sammies. I haven’t tried mini-Snickers, but the weight watchers bars I have are basically like that! Tasty :-)

    Been windy and cold here too, definitely makes the week drag. Dinner looks amazing, can never go wrong with avocado! :-)

    There’s something special about anything that’s sauteed! And topping it off with creamy smooth avocado is divine!
