Salad Explosion

Hey guys!  Gotta post quick so that I can head up to school.

For lunch today, I pulled out my spiralizer.  I haven’t used it in weeks!  I’m so bad about getting SUPER excited about toys and gadgets, and then forgetting about them after about a week. 

How could I forget about my spiralizer when it makes carrots so fun?

I promise to use you more, dear spiralizer. 

This salad was an explosion of flavor (and colors—can’t believe Taste the Rainbow is almost over!).  It had: baby spinach, purple cabbage, grape tomatoes, carrots, mushrooms, and chickpeas.  Instead of dressing, I used big globs of salsa, which also gave me an excuse to crumple some chips over the salad.  Delicious!

For dessert, I got a sweet treat in the mail: a Kashi sample!  This is their dark chocolate coconut bar—very tasty!  And the fact that it was free just makes it that much tastier, right? ;-)

This morning, I put in a DVD that I got for free with my Fitness magazine for this month.  It’s their “four weeks to fit” DVD, and consists of a variety of strength and toning moves.  Each move is done for ten reps and three sets.  I thought it would be pretty basic, but it was actually really challenging!!! I ran a speedy mile before I put the DVD in, then did half of the DVD, ran another quick mile, and finished with the rest of the DVD.  During some of the arm exercises, my shoulders were burning!

We got a slow cooker for a wedding gift that we still haven’t used…*blushing*.  I feel so guilty about it, but you don’t really slow cook vegetables!   I really should give it to one of my meat-loving friends.

    Great salad!
    I’ve got a juicer and a George Foreman grill, neither of which I ever seem to use, apart from after I just bought them! The juicer takes so long to set up and clean…it’s hardly worth it lol!
    I do have a spiralizer on my bday list though :P

    same here, we have a slowe cooker that we haven’t used in at least a year…

    So many gadgets are gathering dust here – a salad spinner (I think you were with me when I bought that one), my vita mixer that I just had to have when I saw it demonstrated, my slow cooker (used once!), and finally, two fondue pots (do people still do fondue?) I guess I’m just not much of a gadget person. I need to have a yard sale!

    I haven’t touched my pizelle maker in probs 9 months. It’s just such a bother to make those cookies, but they’re my mom’s favorite

    Those are all GORGEOUS colors in that salad – makes me want to eat it! I would love a spiralizer. My favorite is my mini food processor. :)

    YUM. I used salsa on my salad today too. Love salsa on salads actually. We actually have a french fry slicer that my mother used when we were kids and a pasta machine that go unused.

    I just got a thing in the mai to re-up my subscription and get that DVD for free. Now I’m tempted!!

    That is the most colorful salad I’ve ever seen!

    That flavor Kashi bar is delish!! I got a spiralizer a few weeks ago and haven’t gotten to use it, since it’s at home and I’m at school. I think I’m more excited to see it than to see my parents!!

    What a beautiful salad! Let’s see, I have an air popcorn popper, toaster oven, toaster, can opener and waffle maker collecting dust currently. The slow cooker can be awesome for bean soups using dry beans, just leave it on low all day and have hot bean soup ready when you get home.

    I am happy you gave me the heads up on the DVD. I received it and wondered what it was. I rarely use DVDs when it is nice out. I should get it out.

    We try really hard not to get appliances we don’t need, but sadly, we have a juicer that has not been used in a long time.

    I am so embarrassed I have yet to use my immersion hand blender. I REALLY want to try it for smoothies – I bet it’s easier than my regular blender!

    Oh and I have a spiralizer that needs more use. And my juicer. I’m hoping those things will naturally happen as springtime brings more fresh fruit and raw veggies!

    My Jack Lalanne Juicer has been dorment for 2 years. I bought it to do a big ole juice fast for Lent one year, and I did- but moved and never unpacked it since! LOL It was a huge mess to clean up after every time without a dishwasher, too.

    I think your salad is one of the most beautiful ones I’ve ever seen! :) I’m dying to buy a spiralizer, but I don’t have any spare kitchen space.

    don’t write off the slow cooker so soon…I am OBSESSED with mine. perfect for busy days. You can make soups, beans, chutneys, etc. Check out the cookbook “Fresh from the Vegetarian Slow Cooker” (robin robertson)

    Oh yeah! My air popper, and that pasta machine that I finally gave away because it was depressing to see it sitting in there while I cooked store-bought pasta! Gosh, I think I need to stop buying appliances. I think all I need is a knife, a pot, and a toaster!

    Haha! We got two slow cookers for our wedding, on top of the one Jon already had.
    My roasting pan and cupcake stand are gathering dust… I don’t really have many gadgets, tho.

    I was really excited when my parents gave me one of their old slow cookers….I haven’t even used it. And I must be a dummy, but it never crossed my mind that meat is what is most commonly cooked in those things. Knowing that, I’m probably never going to use it!

    That salad is absolutely beautiful!

    My husband and I just took out our slow-cooker two weeks ago and this month marks our FIFTH wedding anniversary! Shockingly, there actually are some vegetarian recipes out there I came across when I did a “crock pot recipes” search a couple weekends ago. But most of the recipes do call for meat, as u said!
