Let’s Get Naked

I knew that would get your attention!  :-)

Before you get too excited, you should know that I’m only referring to our dinner.  Which was, by the way, awesome. 

I went to the grocery store this afternoon with the intention of buying the ingredients to make enchiladas for dinner.  Unfortunately, I was planning on making my dad’s special green tomatillo sauce for the topping…and there were no tomatillos to be found!  I thought about using canned enchilada sauce, but I’m not always crazy about the way those sauces taste.  Finally, I just realized that the answer was simple: go sauceless!

This was definitely a good move.  No need for cheese and sauce when the filling is the real star. 

Black Bean Enchilada Filling:

Ingredients

1 tbsp. olive oil

1 onion, chopped

1/2 bell pepper, chopped

1 tbsp. cumin

1 tbsp. chili powder

1/2 tsp. garlic salt

1/4 tsp. red pepper (optional)

1 can black beans, drained and rinsed

juice of one lime

1/4 cup frozen corn

1 18oz. container 0% Fage yogurt (or other Greek yogurt)

Directions:

In a pan, heat olive oil.  Add onion and bell pepper, and cook for five minutes.  Add spices and cook for another ten minutes. 

Remove from heat and transfer to a bowl.  Add black beans, lime, corn, and yogurt, and mix. 

Voila!

We filled four flour tortillas with this filling and placed them seam-side down in a baking dish, then baked for about 15 minutes at 350 degrees, until the tortillas were starting to brown:

Along with the “naked” enchiladas, we had pineapple salsa, which was: one can of drained pineapple, 1/4 cup chopped red onion, 1/2 cup chopped red bell pepper, 1/4 cup chopped cilantro, lime juice, and 1 tsp. lime zest.  Yum!

Mmmm…this enchilada filling was SO good.  The Fage made it so creamy and delicious, and the corn really added some sweet crunch.  Seriously, this was awesome.

    YUM! And of course I’m going to love that pineapple salsa LOL. I started making my own enchilada sauce. Those in the store tend to have too many unnecessary ingredients.

    Yum! We had a pineapple salsa, too — grilled pineapple slices, grilled onion, jalapeno, lime and salt. (Over pork, tho –sorry.)
    This looks good! I think I’ll try it soon!

    Omg your last post was the best thing i have read on the whole Food Rev thing in the sphere. I didnt see it and really, i am totally on board with jaime,with unfattening and re-healthifying our society. I’ts not about weight, it’s about health. Totally true. Money to eat healhier…well, it does cost money to eat but you know what, go to the groc store and only buy fresh produce and bulk grains and with that, you can pretty much feed an army, very cheaply. Stay away from anything packaged any dairy or meat, and all of a sudden healthy just got real cheap. So i dont buy that argument as much b/c when i shop, i impress myself that given all my restrictions, you’d think id have to buy all this “special” food…no, brock and cauli and brown rice do just fine.

    The comment u left me on my post is there any ethical way to kill an animal, killing is killing. Indeed. Pastured, organic, farm raised, it all ends up dead. Great point. I agree!

    And the comment you left on Estella’s post about weight gain in preg. I was worried too on the outset but honestly, once you actually ARE preg, nature takes over and you begin to not care, truly. Just dont gain 75 lbs and eat everything in sight, eat the way you do now, and you will be just fine when it happens for you.

      Re: pregnancy– LOL– I hope my mom doesn’t see this comment or she’s going to think that I’m pregnant :-D

      And I SO agree with you on the expense thing– people think it’s SO expensive to eat healthy, and it IS if you’re buying tons of expensive “healthy” processed foods. If you’re just buying produce and things like brown rice, oats, beans, etc., it can be done VERY cheaply.

      The only thing that’s spicy in it is the red pepper, so if you omit that, not at all!

        This may be a dumb question, but we want to make this over the weekend, so have to ask: u heated the corn and beans before adding to mix and putting in the oven, or not?!

        Nope, they don’t get heated! Just throw them into the mix, and the sauteed veggies heat them somewhat, and then the oven does the rest. Let me know how it turns out for you!!

    The last post was fantastic indeed. I just read it now. I’m not familiar with the show though I assume that Jamie talked to Americans?!? I think he’s absolutely amazing and also a reason why I got into cooking. My mum and I used to watch his show all the time and constantly talked about his creations – it was such a fun time. ;) I think it’s fantastic that his show focuses on health rather than weight. He’s so right, people can be super skinny but still eat unhealthy food.

      Yeah, he’s moved to the “fattest town” in America and is trying to improve the school lunch system and help individual families throughout the town. Pretty interesting :-)

    Those look great – more like fajitas! Sorry you couldn’t make Dad’s sauce, but the pineapple salsa was delicious, I’m sure. One more comment on your last post – we were watching Real Time with Bill Maher last night, and he had Jeff Garlin (from Curb Your Enthusiasm) on. Garlin has lost a ton of weight by eating healthily – no sugar at all, except what occurs naturally in foods (just like your challenge!). Anyway, he was very interesting and fun to listen to. He said for him, it’s all about health, and not losing weight. If you eat right, the weight naturally is what it should be. He has written a book on it. Thought you’d be interested.
