Hello, hello!  Hope your Sunday is off to a good start.

This morning, I did work for a while (although no grading…grrrr, some mornings it’s SO hard to make myself do the work I know I need to do), and then hopped on the treadmill for an hour long workout.  I ran for four miles, and then alternated between walking and running for the last two.  I also watched What a Girl Wants, starring Amanda Bynes, and was actually quite taken with it.  I’m so ashamed.  Actually, you know, I’m not.  If loving movies like What a Girl Wants is wrong, then I don’t wanna be right.

After my workout, Ryan and I made lunch.  I knew what I wanted…egg salad!  As I’ve stated before, I go through love/hate phases with eggs, and I’m obviously in “love” mode right now. 

I crammed so much goodness into my sammie that it couldn’t stand up straight.  It was a tenuous affair:

My sandwich had egg salad (hard boiled egg, soy mayo, salt + pepper), grape tomatoes, and purple cabbage in it…but the tomatoes kept escaping!  No worries…I eat my sandwiches ingredient by ingredient anyway. :-)

On the side: grapes and carrots, followed by my last (sob) mint chocolate chip macaroon.  Plus a handful of chocolate-covered goji berries, if I’m being honest.

    Oh girl, that is an AMAZING sandwich!! I love it :)
    I’m in a very deep hate relationship with eggs at the moment…unless I’m ill, then scrambled eggs on the toast are the only thing I can eat :p

    I have a soft spot for dumb cheesy movies like What a Girl Wants.
    Haven’t had egg salad in years! Looks tasty!

    I love how you have grapes as a side to meals; it makes me want to add them to the grocery list :-)

    My sandwiches and veggie burgers are always slightly askew. Maybe I pile too much on them!

    I have yet to figure out how to make a big sandwich that doesn’t fall apart. Toothpicks?

    What exactly is soy mayo? How come you use it instead of regular mayo if you eat eggs anyways?

      Here’s a link to the soy “mayo” I use. Honestly, I just prefer the taste. I use a lot of vegan products, even though I’m not fully vegan. I drink non-dairy alternatives for all of my “milk” needs (cereal, oats, etc.), and use vegan cheese on my sammies sometimes. I’m not ready to go fully vegan, but I figure little steps like this are good…plus, like I said, I just like the product! Their dijon mayo is really good too!

    I love cheesy teeny bopper movies like What a Girl Wants. You would probably like Make it or Break It!

      Oh, I LOVE that movie. Anything with dancing, cheerleading, or gymnastics and I am there.

        Which is hilarious because I never did any of those things. I guess maybe that’s why I like those movies :-)

    I liked What a Girl Wants and those cheesy movies like Chasing Liberty and whatever the one with Katie Holmes in it is called :)
