Big Fat Salad

I know it’s not a thrilling title, but hey, that’s what I had for lunch.

Sometimes, you’re just not feeling that creative.  ;-)

Happy Saturday, everyone!  We worked all morning long on various grading projects, so now we’re about to go have some fun!  It’s sunny out, but cold, so I think we’re going to take a hike on one of the closer trails.  I’ll bring my camera!

Lunch was…yes, you guess it: a big fat salad!

My BFS had baby spinach, carrots, tomatoes, mushrooms, grapes (why do I never put these on salads?  They’re so good!), a hard-boiled egg, and raw pepitas, plus olive oil vinaigarette.  Yum!

Love it.

Followed by a macaroon for dessert…I only have one left! :-(   Maybe it’s time to make some homemade ones?

    I wish I loved hardboiled eggs because they always look so pretty in salads!

    I want to make homemade raw macaroons, too, but they scare me off for some reason :-/

    Looove big fat salads! I think I’m going to need a lot of those this week. I’m on carb overload!

    Yum! That salad looks good. I love salads but find that it is extremely hard to motivate myself to make one. :/

    I had a salad for lunch too. :-) I need to use more almond pulp to make macaroons!

    Sometimes a big bowl of veg is all you crave — I’ve been totally in that mindset while traveling and already have my first meal at home planned out. Roasted veggies for me, please! :D

    I had a big fat salad for lunch today too, sometimes they’re just what you need! There’s so many awesome macaroon recipes floating around in blogworld, I’m sure you’ll find a good one!!

    Your salad looks delish! Great idea to use grapes…I’ll definitely be adding them to my next big fat salad! :)

    mmmm…i just remembered how much i LOVE hard boiled eggs on salads! gorgeous colors in those pictures girl :)

    my hard boiled eggs never look like that! the middle is always pale yellow & dry. you must share your wisdom. ;)
