Green Machine

Hey there, leprechauns!  Hope you had a great St. Patty’s Day!  Maybe some of you are out celebrating with some green beer right now?

We aren’t having a wild and crazy celebration…but we did have a green meal in honor of the day!

This afternoon, I did some work for a few hours for my classes, and then when Ryan came home at 4:00, we took the dogs on a long walk around the ‘hood.  It was SO nice and sunny out—I just love it! We ended up going for about 2.6 miles…a nice addition to our run this morning!

When we got back to the house, I worked on a craft project for a while, and before we knew it, it was time for dinner!

I have to admit, ever since making that sauce last night for the spinach, I had broccoli and cheese sauce on my brain…so tonight, that’s exactly what we had!

Seriously, this sauce is so good.  Make it.  Now.  Here it is again, just for good measure.  I reduced the garlic salt, because it was a bit too salty last night:

Cream Sauce”

1/2 cup 1% cottage cheese

2 tbsp. grated parmesan

2 tbsp. nutritional yeast

1/8 tsp. garlic salt (optional)

Blend and serve! You can heat it on the stove or just in the microwave if you want it warm.

We served our “cream” sauce over roasted broccoli, kale, and whole wheat couscous.  Mmmmm…this meal was super filling!

Today was a good day! I wanted a snack around 5:00, and I usually would reach for crackers or half of a bar…but, because I hadn’t had my orange yet today, that’s exactly what I had—an orange!  Taste the rainbow SUCCESS! :-)

    That sauce looks so decadent and good. I’ve never thought of putting cheese and nut yeast together! But they definitely do! DUH!

    love the roasted kale! yum! careful, you’re gonna burn it is what i was thinking in my head as i was reading it b/c that’s why i dehyd kale and not bake it…I am known for the singe and burn factor :) and holy heck that stinks!

    I want to lend my support to your amazing sauce – I did it yesterday and it was sooo good – except I just crushed it with a fork cos I did’t want to wash up the blender :P Mine wasn’t as pretty but still tasted gooood!
