Curry in a Hurry

Evening!  Hope you survived Monday…it’s almost over now, right?

This afternoon, as expected, I graded for a good four hours until Ryan came home around 4:00.  At that point, my eyes were about to fall out of my head, so I decided it was time for a break, even though I still had (and have) five essays left.  We headed over to the gym for an afternoon workout.

I’m a huge morning person, and my afternoon workouts are never as good as my morning ones.  Still, it felt good to get moving after basically grading the WHOLE day! I did four miles on the t-mill, and then about twenty minutes of weights. When we got home, we took the dogs for a walk, and before we knew it, it was time to get started on dinner.

This one was was definitely a winner!

Thai noodles with vegetables in a coconut curry sauce:

The sauce was definitely the star of this meal…and it was super easy!

Easy Curry Sauce

Ingredients

1/2 onion, chopped

2 garlic cloves, chopped

1 tbsp. yellow curry powder

1/2 tsp. red curry powder (more if you like it hot)

1 can coconut milk (you can use light if you want, but I used regular)

1 tbsp. red curry paste

1/2 tsp. salt

Directions

In a saute pan, cook the garlic and onion in a bit of olive oil for about 5 minutes, until it has begun to turn translucent.  Add the curry powders and cook for another 5-10 minutes.  Transfer to a food processor.  Into the food processor, add the rest of the ingredients and process until smooth.

Yum!

After I made the curry sauce, I cooked up one zucchini, 1 baby eggplant, and a couple of big handfuls of spinach.  I cooked the veggies for about 10 minutes, added the sauce, and cooked for another 15 minutes.

We served it over more spinach and rice noodles.  Here are some pictures of the cooking process:

Mmmmm…this sauce was good!  Very mild…although you could definitely amp up the heat with some red pepper or more curry powder if you were so inclined!

Not much on the agenda tonight.  More grading for yours truly…I just want to get it over with!  Maybe you have plans that are a bit more exciting?  Don’t tell me if you’re watching Gossip Girl…it will just make me jealous.  :-)

    regular coconut milk is the way to go. it tastes verrrry different with the light. i need to make a curry soon. favorite food ever.

    and those morningstars, didnt think those were new? as i used to eat those about 4-5 yrs ago before me and soy really got into a fight and i dont do much soy anymore. And no, not like a sunshine burger b/c thats seedy goodness but tasty and cheap$er which is nice :)

    That curry looks so yum! I love Thai food, this looks right up my alley! I’m definitely not doing anything exciting tonight. While you’re grading essays, I’ll be studying Biology :( Oh well, once it’s done it’s done!!

    i too am a morning person….there is always something kind of gross to me about working out in the afternoon. it’s like not brushing my teeth….

    Oh my days, that curry sauce sounds AMAZING! Anything with peanuts in, and you’re onto a winner in my book :P
    4 hours of marking…you poor woman!! That sounds rough :s

    This looks so great! I was always scared of curry powder, but I used it in a dish a few days ago and it turned out awesome, so I’d love to try this!

    I agree re: afternoon workouts… unfortunately I haven’t been able to get up at ALL lately, so I’ll have to squeeze one in after work today.

    Coconut curry, when done right, is so consistently tasty and satisfying. Yours looks great!
