Just Not Feelin’ It

Evening, everyone!  I hope your Sunday was nice and relaxing…the way all Sundays should be!

A bit after lunch, the sun came out in full force (yay!), so Ryan and I got motivated and took the dogs out for a walk.  BUT, around mile two, it started snowing again…and getting really windy…and basically turning back into the weather that I am SO SICK OF!!!!  I spent the last half mile of our walk basically just bitching about how sick I am of the Pennsylvania weather.  Sorry, Ryan! It just puts me in such a rotten mood—I am not someone who is happy in cold climates! Ugh. Ugh.

I was watching the local news tonight, and they said that we have gotten FORTY inches over the usual average snowfall for February.  Geez ums.  What a way to spend our first winter here, right? 

Okay…enough of the complaining.

Well, actually, just a little more! :-)

We decided to do a hot yoga podcast.  We turned up the heat, got the space heater going, and started the podcast.  But…I don’t know.  I just wasn’t feeling it.  I ended up just laying on my mat for a while, staring off into space while Ryan continued on with the yoga.  Do you ever have one of those days?  I think I’m just ready for this day to be over.  Actually, I’m ready for this WEEK to be over, because on Saturday, we’re flying down to Shreveport, hopefully to be there when my very first niece is born!  I can’t wait!  Katherine, if you’re reading this—tell Sophie to HOLD OFF until Saturday!  You don’t mind waiting another week, right?  ;-)

Anyway, after my yoga fail, I decided that at least dinner could be good.  I snacked on a leftover corn muffin as I pulled together everything for black bean and sweet potato burritos with spicy corn salad.

Basically, I cut a sweet potato into small chunks, covered them with spicy Cajun spice and popped them into a 350 degree oven for about 25 minutes. 

While they were cooking, I threw the salad together: corn, red onion, cilantro, lime juice, grape tomatoes, chili powder, and garlic salt.  Yum! Easy and delicious!

With our burritos and corn salad, we had some Garden of Eatin’ blue tortilla chips…I accidentally bought the no-salt kind—doh!

In addition to black beans and sweet potato, my whole wheat burrito had cilantro, avocado, and lettuce.  Yum!

I wasn’t feeling yoga or the weather today, but I was definitely feeling this burrito!  :-)

I can already see that I’m going to really get into this challenge.  I love a good competition—even if it’s just with myself!

    This sounds like a great challenge! Everythin I eat is green or orange LOL. Except chooclate, that deserves a rainbow all its own :-)

    Oh my, that looks good. Like super good. Like so super good, I want to leave my place and walk to Trader Joe’s and go buy a sweet potato. But I won’t :)

    I am the exact opposite of you–I do better in cold climates and cannot stand warm weather! I am trying to move north of the Mason Dixon line so I can get that cold weather and snow y’all talk about!

    I totally know how you feel! I’m a California girl! I can’t take this weather! It’s definitely affecting my mood :(

    Yeah girl, I had like an identical dinner haha but different. Sweet potato burittos – best idea EVER!! Must try that!
    I totally have days like that… where you just want it OVER. NOW. It happens. But hey, it’s almost over! :D Have a great night!

    i love the taste the rainbow challenge!! i am so all about eating the rainbow, i try to do it many times per day :)
    the sweet tater/black bean burrito rocks!

    and the yoga. well, like any workout some days youre just not into it…but hey, at least you got the space heater going and got all warm inside :) that’s a bonus for me at least.

    I really love the sweet potato/black bean combo…great idea! Your meals always look so planned out and delicious. I really need to do better on our meal plans. :)

    Awesome that you hit so many colors on the first day! I can’t wait to see how the challenge progresses!

    The snow in PA has been UNREAL this winter, I agree. My old high school has had 12 snow days this year so far!! Stay warm and have a great Monday!

    Ha ha – there have been a few times when Steven is going yoga and I just want to lay on the mat, or vice versa! I hope this week is better! :)

    I definitely have those down days where everything is just off. It’s inevitable, especially with the winter gray, cold weather!
    You did manage to make an awesome dinner though! I love love love burritos like that!

    oh yes, I’ve had those days. I’ve walked right in and immediately out of a gym before since I wasn’t feeling it!

    Who doesn’t have days like these? I often start practicing yoga but give up after 30 minutes or so because I simply don’t feel like it..
    The weather over here is pretty weird too. It’s very spring-like and warm which kind of sucks because I still want to go snowshoeing and snowboarding! (But if the winter gets back with full force I’ll complain again and wish it was spring. Sigh). ;)

    love your taste the rainbow challenge! wow you did hot yoga at home? i should really do that too, considering i use my little space heater to turn my room into a bikram studio anyway, might as well actually do some yoga :) . i would totally moan about the weather, i don’t know how you handle it!

    Sorry about the weather! We could all use some good warm temperatures now! Seriously, could you go wrong with black beans, sweet potatoes, corn, tomatoes and cilantro? Sounds delicious!
