Fun New Toy

Hey y’all!  Another week, another Monday, right?

My Monday has been good so far.  I got a set of rough drafts from my online students, so I spent ALL morning grading…it’s always a bore, but it feels so good to knock them all out at once, instead of drawing it out over the course of the week.  I worked steadily until noon, and then I hopped on the treadmill for a 4 mile run.  I was just finishing up my cool down when I heard a knock at the door.  I ran downstairs to find an Amazon box, containing…

…my new spiralizer!!! I’m so excited to put this bad boy to use!  In fact…I already did! :-)

For lunch, I made some carrot salad with my new toy—it was really easy to figure out!  I’ll put up a post soon with some photos demonstrating how I used it.  For my salad, I spiralized one large carrot, and then mixed it with: 1 tbsp. Fage, 1 tsp. Nasoya mayonnaise, 3 chopped pitted dates, 1 tbsp. chopped walnuts, 1 tsp. curry powder, and 1 drizzle of agave.  Mix it all together, and you get:

You can’t see this as much with the salad, but the spiralizer made really pretty, frilly ribbons out of my carrot!  Ordinarily I would have used raisins instead of dates, but we were out, and the dates stood in quite nicely.

I also had the rest of the Fage with wheatberries and some of this new nut-less trail mix I picked up at the store on Saturday:

I like this trail mix!  It’s a nice combination of flavors, and I LURVE dried pineapple. 

Okay…I think I’m going to give the house a good cleaning.  See you for supper…not sure what’s on the menu for tonight, but I’ll figure it out!

One thing that IS on the menu: The Bachelor, the women tell all!!!  I will be ALL up in that. 

My friend Mike, who we went to dinner with on Saturday night, said that there’s a rumor that Tenley got knocked up (sorry, no nice way to say that) during their fantasy suite date!!! Wha???!?!  I’ll believe it when I see a baby bump…and when she gives birth to the cheesiest baby EVER, with a Texas twang and a penchant for black turtlenecks.  Then we’ll KNOW it’s Jake’s.

    That carrot salad looks and sounds delicious! I would have been spiralizing anything I could get my hands on! I love those things…wish I got a package from amazon with one…guess I need to go order it!

    Well, now I need a spiralizer! Also, there are no wheatberries to be had in Shreveport, so I’m going to make your salad from last night with brown rice. I’ll let you know how it comes out.

    Oh I love that Trail Mix…so yum! That company also makes a GF granola…have you tried it?!

    I haven’t watched The Bachelor in a couple of seasons and from what it sounds like, I’ve missed a lot!

    I just came across your blog and all of your recipes look amazing!! I’m looking forward to trying some of them. Congrats on getting a spiralizer! I’m jealous of your salad, anything with dates in it must be good!

    OMG I just got a spiralizer too and LOVE IT! I got the joyce chen one. I’ve only done zucchini so far … I think I was intimidated to try something as hard as a carrot – but no more! Thanks for the inspiration.

    congats on the spiralizer…i love mine! i know you’ll dig yours too! clearly the Curried Carrot and Date Salad is already awesome looking!!

    and the enjoy life nut free trail mix…good stuff! and dried p’apple is sooo good, isn’t it!!! I love that stuff!

    Getting new kitchen gadgets is always fun…that salad looks like the perfect first meal to make with it! Delish! The trail mix sounds awesome, I’ve never seen one without nuts but I love seeds, too! Have a great night :)
