Hey guys!  Happy (almost over) Thursday! My classes went well today—my students were actually really engaged in our discussion, which always puts me in a good mood.  Some days, they’re so talkative and bright…and some days, I feel like I’m talking to a wall.  

Around 4:00, I snacked on an Odwalla Super Protein bar—I liked it!  I grabbed it on my way out of the house, knowing that I’d want a snack later in the day.  Unfortunately, I’d forgotten all about my zero sugar goal!  DOH!  But, the Odwalla bar only had 17 grams, which isn’t bad for an energy bar.  Plus, it had 14 grams of protein and 4 grams of fiber! 

When we got home from school, we were starving, so we got to work right away on dinner: fajitas! 

Ryan worked on grilling up the veggies on our indoor grill:

We enjoyed our fajitas on whole wheat tortillas, with black beans and salsa.  Yum!

The salsa was Mrs. Renfro’s organic mango pineapple salsa…it’s HOT!!! My mouth was on fire after this meal—in a good way!

Now we’re watching Glee—only five episodes left!  I’m ready for this fake pregnancy to hit the fan!

    I need to get an indoor grill! I think that’s the healthiest mexican food I’ve ever seen… It’s so hard to eat healthy fajitas :)

    This looks sooooooooooo yummy! I’m going to make this as soon as I’m done with this silly diet. I already have the ingredients for some homemade tomatillo salsa, so I’m halfway there.

      You should be almost done with that diet, right?!?

      OH! And, I totally know who your celebrity doppelganger is! Do you watch Young and the Restless? You look just like Sharon!

    That plate of food looks amazing! Do you find the indoor grill to be smoky? If it’s not, then what a great idea.

      Nope, not smoky at all. The grill has a tray underneath that you fill with water, and somehow that stops it from smoking.

    Glee is so good, it keeps getting better. I can’t wait for it to come back in April!

    Dinner looks like it was delicious! Those indoor grills look like they would come in super handy, especially if there isn’t room for an outdoor one.

    I’ve heard that Glee is an awesome show but since it’s almost over, I’m just going to wait until it hits DVD.

    Fajitas are the best!! Especially with grilled veggies..yum!!
    As for class, yeah… haha I’m a student myself so I understand.

    I love fajitas! Yours look so professional…like something I would order in a restaurant. Delicious!

    I have never seen Glee but I’ve heard it is SO good. I’m trying not to get addicted to another show since I can barely keep up with my DVR right now.

    Thank you for showing me what to make for dinner tonight! I have a pile of green onions and veggies in the fridge that are PERFECT for fajitas! I even have a ripe avocado on the counter…it’s meant to be.

    This meal looks fabulous, and I LOVE spicy foods.

    I really enjoy the Odwalla bars. Even with the added sugar (bummer) I still consider them somewhat healthy. I think I remember learning once that if a product has 4 or more (or maybe 5 or more?) grams of fiber, you can subtract that from the sugar content! That’s for diabetics who are giving themselves insulin, but sometimes I use this logic myself :) I started counting how many “extra grams of sugar” I consume and it’s usually about 25-35 grams. I’m happy with that. I don’t feel deprived, and I know it’s not too much.

    Those fajitas look wonderful! We went to see A Single Man tonight (very sad) and then went to Bella Fresca – we were laughing about the fact that we had no one to point out as our resident vegetarian to the waiter. Can’t wait for you to get here!

    Indoor grill?! Thats awesome! I love grilling in the summer, but always have to wait for the good weather to come around. Where did you get it?

    My favorite salsa is Green Mountain Gringo — it tastes super fresh and is nice and chunky, not pasty! Give it a whirl sometime =)

    Mmmm I love grilled veggies and miss them in winter because we only have an outdoor grill! Well better one than none ;)

    Your title made me think of a time when I went to a Mexican restaurant with my grandfather (actually, I think it was Chili’s but whatever) and he ordered the chicken fa-gee-tas.

    I love the Odwalla super protein! I love all Odwalla bars. I wish they were not so expensive!
